Thursday Night Brinner

I was too tired to post this last night. I’m actually too tired right now to post about today. That may have to come in a following post of a weekend recap.

Anyway….. brinner again last night. I was needing (okay, maybe just really WANTING) Golden Spoon after teaching my classes at the Y. Stopped to get some for me and the hubby. What flavors? Well, I’m the most indecisive person ever so I got chocolate malt, peanut butter, cookies and cream, and cake batter. Yes, they can fit all 4 in a regular size WITH a lid. I just have to ask really nicely. Smile

I didn’t want to eat a big dinner knowing that the yogurt was waiting for me in the freezer, so I decided to make a little (okay, big) French toast bake to go with it. I was craving Naturally More, chocolate, and marshmallow. What is Naturally More? Only the one of the coolest peanut butters ever. I buy this stuff in bulk and pretty much eat it everyday. It’s like peanut butter, but less fat, more protein, more fiber and added flax seed. The taste is a little sweeter than regular peanut butter which I love and it has this really great crunchiness to it. Just plain awesome!


Here’s the recipe. So good you almost feel guilty eating it. The whole bake is about 460 calories (490 if you add the crushed animal crackers which, let’s face it, sometimes you just need a little extra crunch. These are my calculations with the specific ingredients I used.)

Naturally More/Marshmallow/Chocolate Chip French Toast Bake

(You can do this with peanut butter or almond butter also.)

  • 2 slices whole grain bread
  • 1/2 cup egg substitute
  • 2 tablespoons light vanilla soymilk or unsweetened almond milk
  • 2 packets splenda
  • cinnamon to taste
  • 1/2 teaspoon vanilla extract (I don’t exactly measure this- I just pour a little bit in)
  • 1 tablespoon Naturally More (or regular peanut butter)
  • 1 large marshmallow (cut in small pieces)
  • 1 tablespoon chocolate chips
  • 4 organic animal crackers (crushed)

Beat together the egg substitute, soymilk, splenda, vanilla and cinnamon. Dip one slice of bread in mixture. Place in ramekin or small baking dish sprayed with nonstick cooking spray. Top with Naturally More (or peanut butter), chocolate chips, and marshmallow pieces. IMG_0040

Dip the other slice of bread in egg mixture and place it on top. Pour remaining egg mixture over everything. Top with the crushed animal crackers.

Bake at 375 for 20 minutes. Wait patiently if you can. Then………




This went soooooooo well with my Golden Spoon!  I just scooped it right on top. YUM!
