Start up the Weekend

I’m a day behind on my posts. Still trying to figure out when to find the time to write. I promised Andrew I would only need about 30 minutes right now and we could order the pizza in 10 minutes. Can I do it?

Friday started off with a little Scrambled Oatmeal for the boys. I needed something fast  and easy and didn’t want to have to clean up much afterwards so we could head out for our run. Whole grain oats+ protein + being able to eat it with fingers= AWESOME! I came up with this because I was tired of having to feed the boys myself. They love oatmeal and I love all the benefits it has for them, so I created the Quick and Easy Scrambled Oatmeal. I actually prefer to do this on the stove with old fashioned oats, but this is the way I make it if I’m in a hurry (which is most of the time).

Quick and Easy Scrambled Oatmeal


Add 1/2 cup boiling water to a packet of flavored instant oatmeal (I like Trader Joe’s brand. The blueberry one is the boys’ favorite.) Let it sit for a couple minutes.


Mix in 1/3 cup egg whites and stir. Microwave for 3-4 minutes and……………


Ta da!!!!!! Delicious! The smell reminds me of French Toast. The boys LOVE it.


And I love it because they can feed themselves. Perfect!

We went for a run after breakfast.


Mommy was NOT loving the hill. Ugh. But…… we did it. The stroller gets heavier every week.

When we got home Andrew swore that I had sweat a figure of Judah. I made him take a picture. Really Andrew, Judah? I’m not too sure and actually am not a big fan of this picture, but oh well.


Okay, ran out of time to sum up Friday. Tomorrow. My job was to get the table ready for dinner while Andrew picks up the food. I better get on it.

      Hopefully the tree is gone now. Trying to fix a couple things and add a pictures there. Oh my- I LOVE my cartons of eggs from Costco. Use them in EVERYTHING!!! Sooo easy!

    My little boy is loving this! I have been wanting to make it for a few weeks now and finally just went for it as a late afternoon snack, haha! He is even using the same sippy cups as the ones in the picture!
    One question for you, I didn’t have any egg substitute so I just used one egg. Have you ever used an egg? How did it vary?

      Morning, afternoon, whatever works right? ha! I love it too. I’ve never used real egg with it. How did it turn out? I have done it over the stove before (with regular oats) and it turned out nicely, but took a lot longer. Thanks so much for reading the blog!!!!!!
