Weekend Wrap-up

Is the weekend really over already? What the heck? Here’s a quick recap of the STUFT happenings. I’ll try to condense it a bit, but have 2 fun recipes to share (oops. Now that I’m rereading this I only got to one.) And since I’m still new to this whole blogging thing, I’m not adding pictures of my friends, etc. I don’t want to “surprise” anyone by putting pictures of them on the internet. Once everyone (including me) gets used to this whole blogging thing I’ll start to add those in. For now, it’s just my boys (yes, all three) and my animals that don’t have a choice. ha!


Dinner at our friends’ house. Amazing house, great company, and FABULOUS food. Halibut fish tacos with this incredible mango avocado salsa. I’m so mad at myself for not taking a picture of the whole presentation. It was gourmet. Much better than our standard paper plates at home. Maybe our host will share the recipe with us on here? he he!

I did manage to capture this sweet, sweet moment of my boys.


I was in charge of dessert. Joaquin, Judah, and I had gone to the store earlier to figure out what we were going to make and we stumbled upon thisIMG_0070

Um, can you say fabulous? I LOVE anything chocolate and peanut butter.  So I just had to make some ice cream pie. This recipe is from my sister-in-law, Bridget’s cookbook, “Reciplease” (the cookbook is awesome). I tweaked it just a little.

Incredible Ice Cream Pie

Pie Shell:

  • 1 box Devil’s food cake mix                                             
  • 1 cup water
  • 3/4 cup chocolate frosting
  • 2 tablespoons oil
  • 2 tablespoons applesauce


  • 1 1/2 quarts light ice cream
  • chocolate ice cream topping (or caramel or peanut butter)
  • Cool Whip
  • candy chopped in small pieces (optional)

Blend all ingredients and beat for about 2 minutes at high speed. Spread batter in the bottom of either 2 9-inch pie plates or one large pan. Bake at 350 for 25 minutes. Don’t be worried. They look like this out of the oven.IMG_0072

Fill with softened ice cream and let set in the freezer. IMG_0074

Then top with chocolate topping and let set in freezer. Top with Cool Whip and candy (optional) and let freeze at least 2 hours.


This is not the prettiest presentation. I didn’t let it freeze as long as I should have. Oops.

I ended up making one with chocolate topping and the other with peanut butter. I also added some crumbled peanut butter cups on top. (Actually it was Reese’s peanut butter eggs. They were on sale since Easter was last week.)

Now on to Saturday…..

Family trip to Anaheim for a luncheon. Car ride there looked like this.


Didn’t take many pictures there and not sure if they’re ready for me to post them on here. But DID take a picture of my bag compared to my sister-in-law’s bag. Guess which one is mine. IMG_1812

The ride home I discovered these darn “bangs” that I think are still trying to grow in from losing hair after after the boys. They drive me CRAZY!


But then I remembered that I can do this


and it made me smile (and annoyed Andrew at the same time).

We ended the night with some yummy wine and pizza. Gotta love Filippi’s.



Not a very exciting day. Everyone was sick. Needy boys, tired mommy, and daddy at work. I did manage to fit in a treadmill run though and bake some ginormous blueberry crumble breakfast cakes. I’ll put the recipe on here tomorrow. Need to eat and go to bed and now I hear both boys crying in their bedroom. Having sick kids is NOT my favorite thing. Ugh.

    Just talked to your folks and they put us on to your site. Really enjoyed seeing the pictures of the Boys (and cat). We had the whole family over for Memorial Day and had a great time.
