Visiting an Old Friend (for a Return Only)

Visiting an Old Friend (for a Return Only)

This morning started out better than yesterday (other than being super TIRED). I needed to use those bananas so I made the boys and myself Banana Bread Bake.

Biggie Banana Bread Bake

  • 1 ripe banana (cut in 1/3, and 2/3- mash the 2/3 piece)
  • 1/4 cup multigrain pancake mix
  • 1 tablespoon whole wheat flour
  • 1 tablespoon cornbread mix
  • 2 tablespoons oats
  • 1 tablespoon ground flax
  • 1/4 cup unsweetened almond milk
  • 1/4 cup egg substitute
  • 2 splenda packets
  • cinnamon to taste
  • splash of vanilla (optional)

Combine 2/3 of the mashed banana and all other ingredients (save the other 1/3 of the banana for the top). Mix until well blended. IMG_0124

Pour into a large ramekin sprayed with nonstick cooking spray. Slice the other 1/3 of the banana and place on top. IMG_0126

Bake at 375 for about 27 minutes. This is soooo good! I like it right out of the oven and when it’s a little gooey still in the middle. The whole thing is about 420 calories. Worth every one! Smile

Um, and I just have to include a picture of the COOLEST plate ever.

You love it right? Eating on this plate makes me happy. Smile

We had a specific agenda this morning involving these.

After Strollerwise class at the park we went to visit an old friend.

Oh how I’ve missed you. We’ve had so many great memories together (BB- before babies). Today it was only to return that dress that’s been sitting in my closet for over 2 years. Thank you for such a great return policy. Someday I will be back (now that I have a little store credit).

Next stop was Trader Joe’s. The last time we were there Joaquin happened to sneak in those chocolate bars in my bag. They were NOT on the receipt so I made him return them to their proper home. IMG_1824

Just like Mom. He didn’t want to give up the chocolate.

Tried to get a some work done outside while having a little snack.

Yum. Strawberry Greek yogurt, Naturally More, and Trek Mix (that I couldn’t resist at Trader Joe’s).

Complete with a soy green tea latte and Pat the parrot.

It was a good idea, but once I got all set up I realized I couldn’t see the computer because of the glare and it was HOT outside (and I probably only had about 20 minutes before naptime was over). At least I got some pictures so I feel like I was cool and worked outside like these other bloggers do. ha!

Trained my client and friend tonight. She inspired me when it was my time to get on the treadmill after the boys were in bed. I didn’t feel like it. I was tired and just wanted to put PJs on. But….. she was tired too today when I got to her house. She had had a long day and still managed to put up with me and the workout. She survived (and hopefully felt that much better after it was over). Smile  She’s awesome!

After I put my sweet boys to bed I got on that darn treadmill and watched the Biggest Loser. Good thing it was only an hour tonight. How freaking inspiring can a show be? I’m soo happy for all those contestants.

One quick side note about bedtime. I LOVE putting my boys to bed.  I feel like it puts the day into perspective. Every night I feel like the luckiest person in the world to have such precious boys. God is good!

Dinner was steamed broccoli slaw with some marinara and a cheese sandwich (made in my cool sandwich maker).

That is not yours Kitty.

Dessert was a Vitatop parfait with a Jell-O Temptation pudding cup and some Fat Free Rediwhip. Vitatops are AWESOME! Love, love, love them! Sooo many things you can do!

Good night!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
