No Alarm, but….

Um…. Good morning?????


Quick entry right now before I tackle the kitchen floor. Breakfast today was…….

Peanut Butter Banana French Toast Bake

I used Naturally More Peanut Butter, but you can use your favorite. This recipe also ROCKS if you use almond butter or for extra special occasions Nutella. Oh goodness.

Here’s what you need.IMG_0193 1

  • 2 slices whole grain bread (my favorite is Alpine Valley multi-grain organic bread from Costco)
  • 1/2 cup egg substitute
  • a little unsweetened vanilla almond milk (or vanilla soy milk)
  • 1 splenda packet
  • cinnamon to taste
  • splash of vanilla
  • 1 tablespoon peanut butter
  • 1 banana (sliced)

Beat together the egg substitute, almond milk, splenda, cinnamon and vanilla. Dip one slice of bread in mixture. Completely soak both sides. Place bread in ramekin sprayed with nonstick cooking spray. Top bread with peanut butter and 1/2 of the banana slices.IMG_0202IMG_0203 1

Dip other slice of bread in egg mixture. Make sure to let the bread soak up a lot of the mixture. Place on top of banana slices. Top with remaining egg mixture and other 1/2 of banana slices. IMG_0206

Bake at 375 for 20 minutes.

Yum!!!!!!!!!!!!!! I eat this with sugar free maple syrup. Delicious!!!!!!!! I also make a version for the boys with a little regular sugar instead of the splenda and almond butter instead of the PB. IMG_0216

    Tried the peanut butter banana french toast. Baked it in the a.m. around 330. Then rode my indoor bike, then went to the gym. Brought the french toast with me to work to eat. It was to say the least……AWESOME. Like sinfully awesome. Thanks so much for a great recipe.
