Cinco de Mayo and a Bag of Dessert Treats

I can’t figure out a good title for this post, so I guess I’ll just go with that. Not very exciting. I’m sitting here tired, full, and can tell that my muscles got a GOOD workout tonight. Taught my classes at the Y. LOVE Thursday nights. Love the people who come to my classes, love that Andrew gets time with the boys AND has the house clean (including the kitchen)when I get home, and REALLY love feeling like I worked hard and accomplished something. Smile  The second class I teach on Thursdays is a group strength training class. It’s a full body weight and band workout in an hour. Oh, how I could go on and on about the benefits of strength training. I’ll save them for a different post though. (There are just soooooo many benefits to address and I don’t have the time to really share them all right now. Someone may need to remind me to do write a post about them in the next few days.)

Another return (to add to my list of things from Tuesday) Sorry boys. This time it was decaf espresso. What was I thinking buying decaf? Dumb.

Later this afternoon I decided to make some easy grab frozen treats. I’ve had a bunch of stuff around the houses (that I usually don’t have sitting around) and didn’t want to find myself at a weak moment with a spoonful of frosting one of these nights, so I decided to make some individual treats and freeze them. I’m all about the single serving desserts. That way it makes it easy to just have one. Here’s what I got out:

Frosting (I really try not to have this around the house that often- it was leftover from the Cake Mix Cookies), Cool Whip Lite, Naturally More Peanut Butter, Costco Organic Animal Crackers, Triple Chocolate Vitatops, Granola Thins, and Fiber One Brownies.

Here are some of the things I made. IMG_0249

(Granola Thins and 1 tablespoon of Naturally More PB- 260 calories)

(Granola Thins, 1 tablespoon Naturally More, 2 tablespoons Cool Whip Lite- 280 calories)

(14 Animal Crackers, 1 1/2 tablespoons frosting- around 230 calories)

(Fiber One Brownies, 2 tablespoons frosting- about 320 calories)

(Had to try that last one with Cool Whip Lite also. Smile )

Last, but not least…….

(Vitatop, 1 tablespoon Naturally More, 2-3 tablespoons Cool Whip Lite- 230 calories)

This one was my FAVORITE!!!! Pretty darn big for around 230 calories. This was inspired by a recipe by Hungry Girl.

I wrapped each little creation with Glad’s Press and Seal Wrap (awesome stuff) and threw them in the freezer. Once they were frozen I put them all together in a big baggie. Now I have a little big variety pack of fun indulgences for an easy grab and eat dessert. Smile

Dinner wasn’t exciting. I was STARVING after teaching my classes. Then I remembered it was Cinco de Mayo. So…..

From Costco. The boys love these too! I microwaved them a little first then I had to doctor them up a little with low-fat cheese, a fresh jalapeno, Cholula and some Trader Joe’s salsa.

Popped them in the oven for about 5 minutes. And……

YUM!!!!!!!!!!!!!!! I actually did one more thing before eating them.

He he he! LOVE salsa and hot sauce!

Tried my Vitatop sandwich for dessert. Not as cute after being frozen, but soooooooooooooooooooooooooooooo delicious!!!!!!!!!!!!!!!!!!!

Bedtime! Too many pictures in this post right? I better cut it down next time. Tomorrow it’s all about my favorite lunchtime salad and money saving tips for lettuce!  Smile 

Am I going to be able to wake up early and get my run in before everyone wakes up??? Hmmm……

    Where did you find the fiberone brownies? I’ve heard about them on a few websites now, but have yet to see them anywhere, and last time I checked the fiberone website they were not listed =(

      Hi Christina! I found them at Costco. HUGE box of them (38). I thought I could replace my vitatops with these (and save money). They’re good. Fudgy and chocolatey, but SMALL. Good though if you just want a little chocolate fix. Let me know if you find them!
