Anyway….. thanks to my Andrew I got to escape for a run this morning. Woo hoo!
Left him with some frozen French Toast for the boys that I made a couple days ago. I FREEZE EVERYTHING!!! (it’s a little bit of a problem)
After 9 miles I needed a little Amazing Straw-nana Cereal Cake. The only cereal I had was Kashi GoLean. I wasn’t sure if it would work for the crumble topping, but I mixed it with almond milk, a little splenda and cinnamon. It was delicious (and smelled sooooo good in the oven).
Fabulous. Ate outside while the boys enjoyed their spinach, strawberry, oatmeal, yogurt and soy smoothie.
Um……. guess I was hungry. Yes, I’m an honorary member of the “clean plate club”.
Okay…. here it is. My salad I’ve eaten for lunch for the past 5 years. It’s evolved a little through the years, and lately I’ve been trying to change things up a little, but I pretty much eat this the majority of the days of the week.
First of all. I buy lettuce at Costco. You can get 6 heads of romaine for under $3. Awesome. I cut it at home, spin in and store it in my handy dandy lettuce spinner (a tip from my sister-in-law, Bridget). It’s always full of cut-up lettuce for a quick and easy salad. If I don’t have a chance to get to Costco I get lettuce at Trader Joe’s.
Here’s what you need for the salad.
Oops. Look what happened while I was getting my supplies.
Not good. I put this together REALLY fast.
- Lettuce
- Broccoli slaw
- a few wasabi peas
- a few wasabi dry roasted edamame
- about 1/4 cup Galeos Miso Ginger Wasabi dressing
While I get the salad together I microwave the veggie burger. If I have time I put a little rooster sauce on it and pop it in the oven for a few minutes to get it crispy
Cut it up and put it on top of the salad. (I mix the salad all up first so the dressing doesn’t just sit on top.)

The boys LOVE these veggie burgers too! They get them for lunch most days of the week.
Quick little side note about the dressing. Galeos Miso Ginger Wasabi. I order it by the cases. LOVE this stuff! The recipe has changed a bit recently and the calories per serving have gone up, but I’m still a huge fan!! Hands down my favorite dressing out there.
And the Seapoint Farms Edamame. Love those too! They’re hard to find. I have to order them online, but LOVE them! A little spice, a little crunch, a little protein, a little fiber, and a little fat. Mmmmm….
