Here’s a little present for all you mothers out there (and non-mothers too).
And a little something extra for my mom, who is my hero, and my bestest friend in Texas who is celebrating her very first Mother’s Day! I don’t know where I’d be without them.

Here’s the recipe for the taco pie from last night’s dinner. Oh man, it is sooooooooooo good. Easy and it’s one of Andrew’s favorites (always a plus when you can impress the men).
Taco Pie
- package Jennie O Extra Lean ground turkey
- taco seasoning (1 package)
- ground cayenne pepper (optional)
- refrigerated pie shell
- 1 small can jalapenos
- 1-2 cups salsa
- 1 medium can sliced black olives
- 1 1/2 cups low-fat Mexican blend shredded cheese
- 1 cup low-fat sour cream or nonfat plain Greek yogurt
Cook ground turkey on the stove. Add taco seasoning and cayenne pepper. (I add a little water also because the extra lean ground turkey gets a little dry as it cooks).
Mix sour cream (or nonfat Greek yogurt) with olives in a small bowl. ( I had to do both- Greek yogurt for my half and low-fat sour cream for Andrew’s. I DO NOT like sour cream and you can save a lot of calories by subbing in the yogurt.)
Put pie crust on a 9 inch round pie plate. Add cooked turkey meat.
Top with salsa, jalapenos, and 1 cup of cheese.
Then add sour cream and olive mixture and top with the other 1/2 cup of shredded cheese.
Bake at 375 for 30 minutes.
Maybe have a margarita while you wait?
Or get on the computer (while drinking your margarita).
Then…….. dig in!!!!!!!! Oh my gosh- this is really AMAZING!!!!
And you know what? I’m even going to admit that we ate the WHOLE thing. Yep, just me and my man. We were STARVING!!!!!

I can’t make any excuses for not making it to Boot Camp last week. I was house sitting for Cara and the guest bed was so comfortable I just couldn’t convince myself to get up. Memory Foam I think.
