Siete de Mayo- That’s How We Roll

Last night we went to the “Garden”. LOVE Becky and Ron. Funniest people EVER! IMG_1840

The boys did NOT wear their pajamas the whole dinner. I just had to change them for the ride home. It was late, okay?

When we got home we had something waiting for us in the freezer.

Um, yum! The Incredible Ice Cream Pie lasted in the freezer all week. And it was THAT much more delicious because it did.

Oh man. Yum!

Whipped together some overnight oats before we went to bed. Got the idea from Kath Eats Real Food. Her blog is AMAZING! Here’s what I put together.

  • 1/2 cup old fashioned oats
  • 1/2 FAGE 0%
  • 1/2 cup unsweetened almond milk
  • 1 ripe banana
  • 1 splenda packet
  • about 2 tablespoons of Naturally More (I used the jar- there was just a little left on the bottom)

When I got up this morning I was so excited to try it. IMG_0325IMG_0330

Look at that yumminess at the bottom. Gobs of peanut butter. Oh my. And…..It was AWESOME. Creamy, peanut buttery, chunks of banana, just plain fabulous. I want to play with it a little- different ingredients, almond butter, chocolate, protein powder, etc. This was my first attempt though and it was successful. It’s going to be a GREAT summer breakfast and soooooo easy to put together at night and just let it sit in the fridge. IMG_0329

The morning consisted of STUFT Fitness boot camp and then Y classes. Got home and my afternoon went a little something like this:

So now, I’m drinking my first margarita in 2 years. The taco pie I made earlier tonight is DONE! And… poor Andrew has to work at 6 am tomorrow (I need to learn how to manage my time better). Oops AGAIN. Okay, dinner time (yes, at 9 pm- bad wife). I will give the taco pie recipe tomorrow! Have a good night!
