What happened to FF?

FF= Fitness Friday. I’ve been meaning to post a strength training workout on here for over a week now. Ugh. I thought “Fitness Friday” would be the perfect opportunity (and a catchy title). Oops. Maybe I’ll get to it tonight (or tomorrow). Yesterday was LONG……

It started out with a 6.5 mile run. Then a little of this.


I wanted some Amazing Straw-nana Cereal Cake, but……. we didn’t have any ripe bananas.


Can you believe none of those were ripe? Come on! (BTW- ALL those bananas were less that $5 at Costco- love it!)

Soo… I decided to experiment a little and I came up with this. It’s very similar to the Amazing Straw-nana Cereal Cake in preparation. 

Mixed Berry Cereal Crumble

  • 3 tablespoons multigrain pancake mix
  • 4 tablespoons unsweetened almond milk (separated)
  • about 1/2 cup blueberries
  • 3-4 strawberries (thinly sliced)
  • a small amount of whole wheat flour (just to coat berries)
  • 3/4 cup cereal ( I use 1 serving as it’s listed on the package) crushed
  • 2 splenda packets
  • cinnamon to taste

Combine the multigrain pancake mix, 1 splenda packet and  cinnamon with 2 tablespoons of almond milk. It should be thick and gooey. In a separate bowl add a little whole wheat flour to the berries. Just enough to coat them a little and soak up some of the moisture. Add berries to the pancake mix. Stir gently to make sure all the berries are coated with the mixture. Put a ramekin sprayed with nonstick cooking spray.

Crush up cereal. ( I’ve been using Kashi GoLean lately. It doesn’t crumble as well, but I like that it has protein and it still tastes good. Smile) Add splenda packet, cinnamon and the other 2 tablespoons of almond milk. Stir. Pour on top of the berry mixture.

Cover with foil. (Reynolds Nonstick is FABULOUS for this – a little pricey though so I only use it sparingly.) Bake at 375 for 25 minutes. Then take off foil and broil for 2-3 minutes.

I was a little nervous that this would get too watery with all the berries, but it held up pretty well. It went FABULOUSLY with a little nonfat blueberry Greek yogurt. Mmmm….



The rest of the day was a BUSY. Then went to visit my bro and celebrate his 30th birthday. He lives in a BACHELOR pad. They have a TV in the bathroom (complete with the remote right by the toilet). Nice. I didn’t take a picture because I thought his roommates might think it was a little weird for me to go to the bathroom with my camera. Maybe next time. I did get a picture at the outdoor bar.

After we got home, got the boys to bed, and I got on my PJs, I was too tired to write but,  not too tired to sit down with some STUFT Fro Yogurt 


and watch some Bethany Ever After. I love that show.


boot camp and then Y classes. We were supposed to go to 3 different birthday parties this afternoon and tonight, but as I was literally falling asleep on my drive home from teaching I decided I needed to rest. Man, I feel like a terrible friend. I even chose a short nap over eating lunch and that’s RARE (and I mean RARE)!!!! Don’t worry-  I had lunch afterwards. Flatout wrap with a veggie burger with rooster sauce, fat free cheddar cheese, a jalapeno, sprouts and lettuce with a side of Kale chips.


And the boys got their smoothie: kale, strawberries, yogurt, soy milk, apple juice and some frozen carrot cubes that I made Thursday. The carrot cubes actually worked really well. Yay!


Okay, I need to feed these boys, take a shower (ugh- I’m still in my sweaty workout clothes from this morning), eat and get to bed. I’m sooooo tired and the boys and I  have an EARLY morning tomorrow.  You’ll hear all about it in tomorrow’s post. Have a wonderful night! Smile
