Well, I was going to write this really quickly earlier today, but somehow here I am at 12:30 posting my weekend wrap-up. Oops. I even had it all planned that I was going to post a short one because my goals for this upcoming week are to sleep more and eat less. I’ve eaten A LOT this past week and am feeling the effects today. Ugh. It doesn’t help that I haven’t been sleeping as much as I should, so…….. if I have to put some things on hold this week to make sure I get more rest, than that’s what I’m going to do. Hmm…. 12:30, not off to a good start huh?
Okay, quick weekend wrap-up. It was weird not blogging yesterday because I’ve been posting everyday. I didn’t even turn on the computer all day. It actually felt kind of good. Wait, I keep getting distracted…. let me start with Friday night.
Andrew let me go on a 7 mile run while he fed the boys dinner. It was a good addition to my Quickie Backyard Calorie Blast. I LOVE that it stays light out later now. I promised I’d make a yummy dinner in return for my
therapy run, so I made this chicken tamale bake. It’s awesome. Easy, fast, low fat, chicken, cheese, cornbread mix, enchilada sauce…… Mmmmmm….

Oh shnikies, fine, here it is (the recipe and some of the ingredients I used)….
This is adapted from a recipe on My Recipes from Cooking Light Magazine.
Chicken Tamale Casserole
- 1 cup lowfat shredded Mexican cheese
- 1/3 cup lowfat milk
- 1/4 cup egg substitute
- 1 tsp. ground cumin
- ground red pepper to taste (1/8-1/2 tsp.)
- 1 can cream style corn
- 1 8.5 oz. box corn muffin mix (I just weighed out 8.5 oz from my big bag of mix from Costco)
- 1 4 oz. can diced green chilies, drained
- 10 oz. red enchilada sauce
- 2 cups shredded chicken breast (or 1 package from the Costco shredded chicken- pictured)
Combine 1/4 cup cheese and the next 7 ingredients in a bowl. Pour mixture into a 9 x 13 inch baking dish coated with nonstick cooking spray.
Bake at 400 for 15 minutes. Pierce entire surface with fork and pour enchilada sauce over the top.
Top with chicken and the other 3/4 cup of cheese. (Add some jalapenos if you want.)
Put back in the oven at 400 for 15 more minutes until cheese melts.
You can top it with sour cream if you want and then choose your salsa and/or hot sauce. Pretty good selection, huh?

Recipe notes- I LOVE the shredded chicken from Costco for Mexican recipes. And you can freeze it. One bag is perfect for this recipe (it comes with 2 in the box). I also love the shredded low-fat Mexican cheese blend from Trader Joe’s- it’s tasty and it’s the cheapest. I used a different enchilada sauce the first time I made these (it was in a can by the salsas) and I think it was better than the Trader Joe’s sauce I used this time.
Oh, and I measure a lot of things on this cool scale (I used it for the cornbread mix in this recipe). I use this scale DAILY. (Except that right now the batteries are dead. Grr…)
So… Friday night was date night- we had some margaritas with our Chicken Tamale Bake.
And watched the greatest show of all times….
Modern Family. We finished date night off with a Reese’s sandwich. Holy moly.
Saturday I taught boot camp and then a couple classes at the Y. Then the boys and I were off to Target, home to make (and sample) some of these cracker cookies,
and then to meet my friend’s beautiful new baby. LOVE him and the crazy birth story. I wore these pants ALL day.

Well that’s nice. Luckily it was a small one. One of these days I’m going to be teaching a class and my pants are just going to split in front of everyone. Ha!
Saturday night- Costco Orange Chicken (with some Trader Joe’s Chinese vegetables that I added shrimp to) and some wine. Then some of the reject cracker cookies I made for my friend with our dessert. I got a little out of control with the desserts- the wine made me do it. Oops.
Today the boys and I had some Amazing Straw-nana Cereal Cake for breakfast. I made it with these fruity Puffins as the crumble topping. It was sooo good.
This can’t be good.
It was gone 10 minutes later, but what was that? Did it happen to Judah?
Nope. Man, he loves the camera though.
I was in my pajamas ALL DAY (until I got on the treadmill at 8:30 pm). It was awesome. I have the BEST sisters-in-law EVER and one in particular always offers to watch the boys. She watched them for me for a couple of hours this afternoon so I could be productive. So nice!
I was very tempted to sit, read a magazine and eat some chocolate in my 2 hours with a quiet house (only because I didn’t know where to start with the mess- I was overwhelmed with the amount of things I had to do and was craving some CHOCOLATE), but…… I had a Dark Chocolate Pomegranate Vitatop and 1/2 of a Peanut Butter Crunch Supreme Protein bar (my FAVORITE protein bar of all time) and I was good to go. Thank goodness they have these yummy alternatives that satisfy the chocolate craving without all the guilt.

I think the party was a success. Now if only the office would clean itself.
Oh, I almost forgot, smoothies today were broccoli, spinach, frozen carrot cubes, strawberries, kefir, and apple juice. I’ve never used kefir before, but I like that it has probiotics and is high in protein and it made a really good smoothie. I liked the consistency. I’m going to experiment with it this week a little more.
Okay…… here’s to a week of eating a little less (Oh man, I’ve really been splurging this past week- I usually try to save my indulging for the weekend, but I treated myself pretty much every night this week-what was I thinking?) and sleeping a little MORE. And… organizing my dang office. Come on Kristin…..
