Someone’s Got a Case of the Mondays

I wasn’t sure I’d have anything exciting to write about today. I knew I was going to spend the day driving to the coast and back 2 times and teaching classes (5 total today- ugh. LONG.) Well…….. My little buddy Joaquin pulled through for mama.

You like that? ha! Here’s what happened……

We was running late to Strollerjam class (as usual- I am ALWAYS running late) after our yummy Amazing Straw-nana Cereal Cake (soo soo good- especially on cold mornings like today). On the ride over, Judah fell asleep and I then I heard some strange noises from the back seat. Ummmmm…….

Ugh. This was NOT the first time he’s barfed in the car. I think he gets a little car sick. You’d think I’d learn and be prepared. Of course not. No change of clothes and only a couple of wipes in my bag. Awesome.

Luckily, a couple of my friends at Strollerjam saved me (they were prepared- one of these days I will be too). A new clean outfit- shirt, sweatshirt, and cool black leggings (He looks better in leggings than I do, even with his bowlegs. How is that?). Thanks Jeanne and Julie! Look how happy he was in his new outfit. Annoyed

Yeah, Judah just looks grumpy most of the time in public. He has a little social anxiety. We’re working on it. Smile

A couple of noteworthy meals of the day. Scrambled eggs with spinach and avocado for lunch for the boys. Followed with a Sunbutter sandwich (no picture).

I made this awesome wrap for lunch.

Inspired by my friend Robin who was eating eggs with avocado on toast the other week.

  • flatout wrap
  • 1/2 cup egg substitute (cooked on the stove)
  • 1 light swiss laughing cow wedge
  • fresh spinach
  • avocado
  • Marie Sharps hot sauce  (YUM!!!!!! It is awesome. We discovered it in Belize a couple of years ago.)

For dinner I had a bunch of things left over from the Chicken Tamale Bake. I tried to recreate it with polenta instead of the cornbread mix.

Well, it was good. Not nearly as good as the Chicken Tamale Bake, but it did the trick for some spicy Mexican food with some yummy corn goodness.

Polenta, enchilada sauce, shredded chicken, green chilies, laughing cow light queso wedge, and some jalapeños. I added some of this too.

And a bunch of salsa, but it didn’t look very nice once I put it on top. ha!

Okay….. off to bed. Sleep more and eat less this week Kristin! It’s 12:15- I guess I’m taking baby steps……… Good night!

Wait, I’ll leave you with a little Monday motivation- when you find yourself in a slump  or are feeling like you want to give up, remember your long term goal. The one you’re passionate about. You WILL achieve it and be successful. It’s only normal to have to overcome obstacles along the way- that’s what makes us stronger anyway. Smile  Remember the Grit article? Visualize the end goal and how you’ll feel when you get there. I need to do that with this blog (which has become such a big part of my life in such a short amount of time) and with STUFT Fitness. I have so many big visions for both of them, but I know it’ll take a lot of hard work, perseverance and time to get there.

    Never stop writing and posting!! (no pressure!) Your latest one just cracked me up! I love your writing style and I love, love, love all the photos. How you find the time to do all this, is beyond me. oh wait..that’s right….you hardly sleep! Crazy chick!
