Jumping on the Smoothie Train

Well, hello! Smile The minute I woke up this morning I had a little fear about what I wrote last night about my challenge to lose those 7 pesky pounds. Oh man. I usually keep my weight issues all to myself and don’t tell anyone (except for poor Andrew who has to hear everything). It felt like pushing the “send” button on an email and then wanting to take it back. Oh well though, right? I said in my very first post that I was going to put it all there. It’s a little weird for me though.

ANYWAY………………….. last night’s dinner was a little Trader Joe’s Spinach Lasagna and a cheesy Flatout sandwich (one Laughing Cow Garlic Herb Cheese wedge and a low fat Trader Joe’s string cheese) made in the coolest sandwich maker ever.

Decided to brave this little guy this morning to see if he wanted to be nicer than his “friend” at the gym last night. He was a little nicer- thank goodness. I just needed an official starting point.

At first I thought he was low on batteries, but I managed to press the corner enough times that it worked. Lucky me. Baring teeth smile Got my little notebook together to record my progress in the next couple of months towards my “healthy, happy weight” goal. I’m so nerdy. I like graphs (and lists, notebooks, etc.)

Okay, so after a quick breakfast Quick and Easy Scrambled oatmeal for the boys and a low fat pumpkin oatmeal muffin (that I found at the bottom of the freezer- I think it’s been in there for over 5 months) and my favorite morning mocha for me,

we were off to Strollerwise and to run a couple of errands.

We went to Jimbo’s to get some xanthan gum for smoothies because Julie at Peanut Butter Fingers makes amazing smoothies and adds this to make them a little thicker. I love thick, creamy things so I just had to try it out (and her smoothies always look amazing).

I found a couple other things while I was there. Oops. I couldn’t decided which flavor of this herbal coffee I wanted so I bought them all. I’ll give reviews after I try them out. I’m going to combine them with my espresso to take my morning caffeine consumption down a notch (that’s the plan anyway).

So…… on to smoothies. The boys got their standard smoothie of the week: broccoli, fresh spinach, Kefir, frozen strawberries, organic vanilla soymilk and a little apple juice.

After they went down for a nap I experimented with my new xanthan gum purchase. Here’s what I put in my smoothie:

  • 1 cup unsweetened almond milk
  • 1/4 cup Vanilla Soy Slender (I had to add this later because it was too thick and wouldn’t blend at first)
  • fresh spinach
  • 1/2 scoop Designer Whey Vanilla Almond Protein PowderIMG_1017
  • frozen strawberries
  • a spoonful of almond butter
  • 1 Splenda packet
  • a pinch of xanthan gumIMG_1019

It did NOT disappoint. LOVED how the xanthan gum made it have a milkshake-like consistency. Mmmmm… so many more things to try with that stuff.

Well, guess I liked it. Smile I will DEFINITELY be making A LOT of smoothies this summer. This is only the beginning. Too bad my poor little Magic Bullet is getting a little run down. Can I make smoothies in a food processor? Or maybe I need to try to win a Vitamix blender. Ha!

Okay…… bedtime. Tomorrow’s Friday!!!!!!!! I should find out of I won the Kenny Loggins tickets (for his concert on Saturday for Mom and I). Cross your fingers!!!!!!! We LOVE Kenny!!!! “Gotta Get Footloose…..”

And yes, I even have a Kenny Loggins shirt. Don’t be jealous.

    Sometimes the best way to keep the eyes on a goal is telling the world you have one 🙂 I found that very useful. And smoothies are good! I love making them all year long. Good luck in your journey!
