Oh My Overnight Oats

Happy Friday!!!!!!!!!!!!! Smile Okay, so I think I have a good grasp on my basic overnight oat recipe. From here I’ll have to experiment a bit and try different nut butters, etc. But…….. these were delicious this morning (and I’m sure they’ll be  just as good tomorrow and the next day, and the next day…… ha ha ha!)

My first try at Peanut Butter and Banana Overnight Oats in a jar was a good one. I didn’t add as many oats in this new concoction (because I wanted to top it with some yummy goodies like all the cool bloggers do) AND I added chia seeds (which are amazing, but get stuck in your teeth a little- he he). They were thick and creamy with  big chunks of banana. Mmm…….

Basic PB2 Banana Overnight Oats

  • 1/4 cup old fashioned oats
  • 1/2 cup nonfat Greek yogurt ( I use FAGE 0%)
  • 1/2 unsweetened almond milk (vanilla flavor is the best)
  • 1 banana (I like it to be pretty ripe for this so it’s sweeter)
  • 1/2 tablespoon chia seeds
  • 2 tablespoons of PB2
  • 1 splenda packet
  • cinnamon
  • splash of vanilla

Combine everything in a medium container. Cover and just let it sit in the refrigerator overnight. Then………….. in the morning, put this amazing stuff in a bowl and top with some fun goodies (If you want. They’re actually really great just plain, but I wanted to go all out for a Friday morning.)

Holy catfish (That’s for my grandpa- love him and miss him). I put a tablespoon of Naturally More, a little Kashi Go Lean and some of my new favorite trail mix from Trader Joe’s (there’s a picture of it on this post). Yum!!!!!!!!!!!!!!!!!!!!!!!!

Hmm…… what should we do today? Play with Tupperware (that drawer USED to be so organized)? Or a workout video?

Well….. We went outside for a little Backyard boot camp workout. just a short one because later tonight I have a therapy session (aka running date with myself). Smile Yes, running is my therapy. I talk a little more about that on my Nation Running Day post. Then it’s date night after the boys go to bed. We’re getting into the Skinny Girl Margaritas (which I’m really excited about), I’m making Taco Pie, and hopefully we can find something good on TV (now that all the shows are over for the season- ha!).
