10 Things- Food Edition

I’ve realized that I’ve eaten a few cool things the past few days that I haven’t talked about, so thought I’d just revisit a few fun ones really quick (and then I’m off to start my MO -Mission Impossible Organization. Smile 

Just for fun, let’s work with 10. 10 random meals/snacks/smoothies over the past couple of days. Here we go:

Trader Joe’s Spinach Lasagna (topped with fat free feta) IMG_1349

 

My favorite veggie burger lettuce wrap with broccoli slaw, a little Galeos ginger wasabi dressing, and

rooster sauce

Roasted zucchini with marinara and a grilled cheese sandwich (I used Trader Joe’s Whole Wheat Tuscan Pane) with a Laughing Cow light Garlic and Herb wedge and a low fat string cheese inside (this was AWESOME).

Broccoli slaw spaghetti with chicken, spinach, olives, and feta (and a Flatout cheese sandwich with I Can’t Believe it’s Not Butter Spray, parmesan cheese, garlic powder and a low fat mozzarella cheese stick inside)

Spinach, frozen strawberries, kefir, soy and apple juice smoothie ( J&J) IMG_1512

Flatout wrap with egg substitute, fat free feta, and spinach (It was breakfast this morning because it was too cold out for my overnight less oats- I’m saving them for lunch) IMG_1508

Almond Vanilla STUFT Fro Yogurt on top of a Double Chocolate Vitatop IMG_1504

Now…. a few recipes on some of these. I’ll start with the last one (because it was FABULOUS)!

Almond Vanilla STUFT Fro Yogurt

1 cup nonfat Greek yogurt ( I used FAGE)

1 serving Jell-O sugar free vanilla pudding mix (8 grams of powder)

1/2 cup Cool Whip Free (thawed)

a little almond extract

1 splenda packet (optional)

Mix together the yogurt, pudding mix, almond extract and Splenda. Gently stir in the Cool Whip Free. Put in airtight container and freeze for an hour (or a little longer). IMG_1500

Mmmmmm……. Goes best over a Vitatop!!!!

And with a few semi-sweet chocolate chips on top. Heaven. Smile

Roasted Zucchini

Slice up a couple zucchini. Put them on a lined baking sheet sprayed with nonstick spray (I use olive oil flavor). Spray cut up zucchini again with cooking spray and sprinkle a little garlic salt, garlic powder, parmesan and crushed red pepper.IMG_1426

Bake at 400 until parmesan starts to brown a little and zucchini is cooked (about 10 minutes or so). IMG_1429

Sooo good dipped in marinara. It feels like you’re eating fried zucchini, but you NOT! Smile 

Broccoli Slaw Spaghetti with Chicken, Spinach, Olives and Feta

I sautéed some broccoli slaw in a pan sprayed with nonstick spray. IMG_1488

Then I added some marinara sauce and spinach, IMG_1490

some chicken breast (that I froze during my afternoon of freezing)IMG_1489IMG_1491

And then some feta, a few sliced black olives and some red pepper. YUM!!!!IMG_1494

And wanted to give a quick little shout out to the wonderful people over at Snack Aisle. I’ve been ordering dry roasted wasabi edamame (for my Best Ever Ginger Wasabi Green Salad)  from them for years (along with some other fun snacks). They have a huge variety of snacks to choose from and have the BEST customer service. I got two phone calls to help me place my order over the weekend because I was having trouble using my coupon code. Turns out it was all me not doing it right (figures), but how nice for Kim to call me on her day off. Thanks Snack Aisle!!! Smile 

Okay, gotta go! have a good day!!! MO (Mission Impossible Organization) here I come!!!!! Well, actually, maybe tonight since the boys just woke up and they’ll need some lunch (and play time with mommy).
