After we got situated this morning, I’m pretty sure I had the best bowl of oatmeal I’ve ever had. It’s only appropriate to share, right? Look.
Wait, that doesn’t look that good. Let me show you the finished product.
Yum!!! I’m sure there’s a better way to do this, but here is what I did.
Oh My Big Bowl of Banana Oatmeal
- 3/4 cup water
- 1/2 old fashioned oats
- 1 cup vanilla soy milk (or almond milk)
- 1 splenda packet
- cinnamon to taste
- 1/2 tablespoon chia seeds
- 1/2 cup egg substitute
- 1 banana (sliced)
- splash of vanilla
Boil the water. Once it’s boiling, add oats, soy milk, Splenda and cinnamon.
Bring to gentle boil and cook for awhile (until the oats are pretty much fully cooked). Add chia seeds and keep cooking. This takes awhile, keep stirring occasionally.
Once you have a good thick oatmeal add egg substitute and sliced banana. Stir and cook until the egg substitute is cooked. Stir in vanilla at the very end once you take it off the stove.
It looks little weird, but oh my goodness it is FABULOUS!!!!! It’s warm, banana yumminess and not to mention HUGE (you know how I am about big portions). I was tempted to put some Naturally More on it, but I have big plans for dinner tonight and wanted to save up. Next time though……. The version I made here was about 420 calories – it will vary a little depending on what type of milk you use (I used Soy Slender).
After breakfast, we went for a run. I decided to sport one of my new outfits from when I went shopping Saturday.
What do you think? Too much purple? I kind of felt like a grape.
I did not plan the purple water bottle on purpose. Hey, look at Joaquin’s hair.
And all these hills.
Ugh. It was a little rough. That darn stroller gets heavier each time.
Smoothies when we got back. I had one with spinach, frozen broccoli cubes, vanilla almond protein powder, and some almond milk.
It wasn’t too bad. I would’ve opted for a protein bar or some fruit in there too, but I’m saving up- Mom and I are headed out for a girl’s day at the casino. Pedicure (thank goodness since my toenails are RIDICULOUS), buffet (oh my, all you can eat desserts- I better be careful), and some nickel slot machines (hopefully I’ll win big- then I can finally get a Vitamix).
I better get in the shower so I can look somewhat presentable (and shave my legs- they’re a little scary right now too).
Oh, wait, I wanted to ask if your laundry “helpers” ever do this?
This guy was on fire this morning.

Those were “post” wash right? hahaha… Someday you are going to have so much ammunition on those boys!! They are so cute! I wish I had help with the laundry – the only help I get is others adding to it!
By the way the oatmeal/chia/egg thing looks great – I will try it after camping – only carbs and sugar when I camp (just kidding – kind of).
