Breakfast and Broccoli Balls

No, not together silly. Last night I had to experiment with some broccoli that was sitting in my fridge. I had made broccoli parmesan patties before for the boys (which are pretty darn good), but I wanted to experiment a little more.

I toasted 2 pieces of my favorite bread and then threw them in the food processor. Did the same with fresh broccoli.



Added 1/2 cup egg substitute, 1/2 cup shredded reduced fat Mexican cheese blend, some garlic powder, sea salt, pepper and cayenne. Then I made them into little cute balls.


Baked them at 400 for about 20 minutes while someone kept a close eye on them.



Voilà (I just had to check the spelling on that-  I first had it as waa laa- didn’t want Mom to catch another grammatical error).


I served them up with some Costco rotisserie chicken covered with some TATS Original Ghost BBQ sauce (amazing stuff) and a jalapeño. Oh, and a little low fat ranch on the side.


Mmmmmmm…… (I think they’re better with parmesan cheese, and if I were to make them again I would add another piece of bread to soak up a little more of the egg, but they were good. And they were about 450 for ALL of them.)

This morning, I realized it had been WAY too long since we’ve had our Amazing Straw-nana Cereal Cake.



I got to use my new cool oven mitts  from Mom.


She bought these for me because she was tired of looking at these ones (that were a wedding gift- we got married in July 2004).


I promised her I’m throw them away. Bye bye!!!!


Our Straw-nana Cereal Cake hit the spot. ( I was too lazy to crush the Cheerios for the boys’ cake. It still worked though.)


And mine……………..


went PERFECTLY with a homemade mocha frap (1 1/2 cup light vanilla soymilk, 2 tablespoons my favorite cocoa powder, 1 tablespoon instant espresso, a pinch of Bob’s Red Mill Xanthan Gum, and some crushed ice). I just HAD to top it with a little fat free Reddi-wip too!


Hey, these dudes are really starting to like the camera!
