Weighing In

I didn’t post last night, I had to catch up on the Bachelorette. Really people? Bentley is coming back next week? What the????

Anyway…. I’ve been trying to be a little more careful this week with my eating choices and trying to not eat as much (man, I tell you, I eat A LOT). I weighed in this morning and I’m making some slow progress towards losing those 7 pesky pounds. I think really refocusing and writing out all my healthy, happy weight goals helped (even though it made me nervous to write it down for the world to see). I don’t really want to focus on a number on the scale though- it’s more about how I feel. Isn’t it great how it just takes a few days of healthy eating to start feeling better? Love that. Now, if I can just keep it going (and get some more sleep). Winking smile

So…… a little recap of the day….

This morning we were in a hurry. Luckily, I freeze everything and had a couple of quick things I could heat up. A biggie banana bread bake for the boys and a corn Vitatop for myself.


Note- that Vitatop has been in my freezer for almost a year. Do things go bad in the freezer? Let’s hope not. Thinking smile

Vitalicious just recently posted a recipe for strawberry shortcake using a cornbread Vitatop, so I had to try something like it for breakfast. I heated some strawberries on the stove with a Splenda packet and some cinnamon and put them on top of the Vitatop. Yum,yum, yum.




Well, of course I had to add a little of that (and have my favorite morning mocha to go with this). Coffee cup

You can’t even tell that banana bread bake had been frozen. He he!

Oh my goodness, I was super hungry after Strollerwise class so I fixed up a big bowl of overnight less oats with some Trader Joe’s Organic Trek Mix and Kashi Go Lean Crunch. It was awesome.


Love the trail mix. (The cereal- well, it was okay. Not my favorite.) The boys had their typical smoothie- spinach, frozen broccoli cubes, strawberries, Kefir and apple juice.


They’ve been inhaling veggie burgers and SunButter and jelly sandwiches on the best bread ever for their lunches lately.



I had a turkey spinach wrap later in the afternoon also (and a Coke Zero). I was busy working though so I didn’t take a picture.

Dinner was on my own late at night because I taught classes until 7:30. On the menu: STUFT Tomato and Red Pepper soup with cheese sandwiches in my favorite sandwich maker. A Flatout sandwich with Laughing Cow light blue cheese wedge and fat free cheddar and a whole grain bread sandwich with light provolone, Mini Babybel light, and a Laughing Cow Light cheese wedge.




Just fabulous!!!!


And Skinny Cow sandwiches- I am LOVING you these days!



I also love these from Trader Joe’s. They’re a little smaller though. The Skinny Cow sandwiches mean business and could crush these little guys, but I still love them anyway.


In honor of my healthy, happy weight challenge, I’m not going to make any more frozen goodies to add to my bag of dessert treats (they’re just too tempting for me- ugh). I’m going to try to stick to some easy low fat desserts (overdoing it on sweets is my downfall). 

My ultimate favorite has to be the Skinny Cow cones. Please tell me you’ve had them. Mmmm…… I haven’t bought them forever though because I’ve been buying Skinny Cow sandwiches at Costco (they’re cheaper).

Oh, and I’m working on a post all about Kitty right now. I originally had it combined with this one, but it got too long and I feel like Kitty deserves his own post. Stay tuned…….

But, for now….. what’s your favorite light dessert treat? Or what are some things out there I need to try?

    I LOVE dessert:) That is my downfall as well:( Right now, I’m loving a couple of tablespoons of Better than Peanut Butter(100 calories and very low fat) with about 16-ish(1 serving) chocolate animal crackers. I just dip them in the BTPB and enjoy. It’s about 230 calories and very satisfying. You need to try it!

      Oh yes, I love that Better Than Peanut Butter stuff and I love animal crackers. It’s so hard to have just one serving. Have you ever made little sandwiches with the crackers and peanut butter and then frozen them??? It’s AWESOME!!!!

    Those ice cream sandwiches are delicious. I have Better Oat’s instant oatmeal every night. My favorite flavors are dark chocolate and blueberry muffin =]

      Um… yum!!!! Dark chocolate oatmeal??? I must try these. I like it after it sits in the refridgerator for awhile too! Mmm……. cold oatmeal. 🙂 Where do you get your oats?

        It’s just an instant oatmeal brand at Albertsons. I’ve tried making my own with cocoa powder too.

    I’m dying to know where to buy all of these goodies. Fage greek is so hard to find. I’ve checked Albertsons, Vons, Walmart, Costco. I’ve been using Greek Goddess, but has higher carbs/sugar. Also, the Vitatops, PB2, Chia Seeds (saw these at Baron’s for 7.99). If I can eat what you eat maybe one day my arms will look like yours…HAH!!! 🙂

      FAGE is at Costco. By the other yogurts. Trader Joe’s has their own generic brand also which is a little cheaper (and they have some different flavor varieties). Henry’s has the cheapest chia seeds.

    I have the hugest sweet tooth around. I love frozen yogurt with roasted almonds on top, chobani 0% fat with some nonfat granola, chocolate vitamuffin, mint or cookies and cream skinny cow ice cream sandwiches, 70% dark chocolate from Trader Joes, and the best hot summer day treat is Mocha Caffe d’Vita blended with ice and not fat milk ( I could have it everyday)

    I love love hot sandwiches, only way I eat them, and that sandwich maker is so cool! Those cheese sandwiches look insanely delish! I have a panini maker and I absolutely love it, it’s been on the fritz though lately so I haven’t blogged with it yet. In the meantime I’ve just been grilling my sandwiches on the stove top or just toasting the bread….I was going to get another one but maybe I should go with your maker?! Do you think you could use sandwich thins on it?
