Here are a couple different versions of hooligan pancakes. Woo hoo!!!!! You can click here to see my original post on Hooligan Pancakes. Or you can try one of the following ones (or all of them). Smile The first basic recipe is the one I use for the boys. They dig it!

Just Your Basic Hooligan Pancakes

  • 1/2 cup whole wheat flour
  • 1/2 cup nondairy milk (you can use regular milk also, I usually use vanilla soy milk or almond milk)
  • 1/2 egg substitute
  • cinnamon
  • splash of vanilla
  • a little regular sugar (about 1 teaspoon)
  • dash of salt
  • 1 tablespoon light buttery spread (I use Smart Balance)

Mix all ingredients in a medium bowl. Preheat oven to 400. While preheating place 8 x 8 glass baking dish with the tablespoon of light butter (or margarine, etc.) in the oven. Let the butter melt.

Spray the dish with a little nonstick cooking spray. Pour batter in dish and cook for 25 minutes.

It puffs up like this in the oven.

Serve with a little agave syrup, strawberries, almond butter, etc.

Variations on the plain version-

- I like to substitute 1/4 cup of oats and 1/4 cup whole wheat flour instead of 1/2 cup whole wheat flour when I’m making these for myself. It gives them a better texture. They doesn’t rise up like the regular ones do, but they’re delicious. I also like to use almond extract instead of vanilla. I LOVE the almond flavor/smell. I also use 1 splenda packet instead of the regular sugar.

Okay, wait, this is silly. I’m just going to list it out. It’ll be easier. Here we go.

Mama’s Plain Hooligan Pancakes

  • 1/4 cup whole wheat four
  • 1/4 cup oats
  • 1/2 cup almond milk or light vanilla soy milk
  • 1/2 cup egg substitute
  • 1 splenda packet
  • cinnamon to taste
  • splash of almond extract
  • dash of salt

I don’t use the light butter spread. I just spray the dish with nonstick spray (butter flavor) before pouring the batter in and then spray the top with a few sprays of buttery spray (I Can’t Believe it’s Not Butter, etc.) before I put it in the oven. Bake 400 degrees for 25 minutes. The whole huge square pancake is about 270 calories (depending on what milk you use). I eat the whole thing in one sitting (usually with sugar free syrup or strawberries).

Now, it can’t be complete without a banana variation, right?

Banana Hooligan Pancakes

Use all of the same ingredients above (whichever version you choose). Just add 1 banana to mixture before pouring in into the dish. These don’t puff up quiet as nicely as the regular ones either, but they are soooo tasty. Who cares if they puff up, right? The warm, mushy banana is just awesome and then the corners get all crunchy! Yum!! We had this version yesterday for Father’s Day. You can click on the link to read about it. IMG_1438

And…… when I’m really feeling a little crazy I add some PB2, Naturally More, or other nut butter to the mix. Now that is to die for. Mmmm……

I’m off to the Y to teach 3 classes in a row. Yikes. But…… when I get home (and after I clean up the house a little- MO is still off to a VERY slow start), it’s BACHELORETTE time!!! Woo hoo!!!!!!!!!!!!!!!! Bentley is supposed to come back or something, right????? It’s going to be crazy!

Oh man, I may need to make some Cheesy Wild Bread STUFT Style.

    This recipe is awesome! I’m baking one right now. I don’t have an oven which goes up to 400 degrees so I’d cook mine at 200 degrees instead. Hopefully, it’d come out the same.
