Yes, that’s right. I have my new favorite breakfast. I was already thinking about it when I went to bed last night and this morning when I whipped it up, it was just as good as I thought. Ready????
A single serving warm banana muffin in 3 minutes? How FABULOUS!!!!!!
3 Minute Banana Muffin Mug
(Okay, so not the best picture, but I was in a hurry and these boys over here are OUT OF CONTROL.)
- 2 tablespoons whole wheat flour
- 2 tablespoons rolled oats
- 1 tablespoon ground flaxseed
- 2 tablespoons egg substitute
- 1 large banana
- 1 splenda packet
- 1/2 teaspoon baking powder
- splash of vanilla
- cinnamon to taste (optional)
Mix all ingredients together and pour into a mug sprayed with nonstick cooking spray.
Microwave for 3 minutes. (You may need to adjust cooking time depending on your microwave.)
Take out of the mug and cut in half. The whole muffin is approximately 250 calories. I topped mine with some Naturally More while it was still warm.
OMG- sooo good. I served it with some PB2 cottage cheese (recipe will follow) and had a blended iced mocha (made with espresso cubes) with it.
It’s okay to be jealous. ha!
Here’s the PB2 cottage cheese. It’s a great high protein treat. I used to eat this EVERYDAY for breakfast. It’s great on toast, with an apple, in a Flatout wrap, with yogurt in a parfait, etc.
PB2 Cottage Cheese
- 1/2 cup low fat or nonfat cottage cheese ( I use the 2% cottage cheese they sell at Costco. It’s only 20 more calories and way cheaper than nonfat and I like the taste better- it’s more creamy.)
- 2 tablespoons of PB2 powdered peanut butter
- 1 splenda packet
Mix all ingredients in a bowl. You can serve it (or eat it) immediately or cover and let sit in the refrigerator for awhile. I like to let mine chill in the refrigerator for awhile.
Sometimes I add a tablespoon of Naturally More or peanut butter also and swirl it together. Mmmm…….. not today though- that scoop of Naturally More went directly on my microwave muffin.
Now….. espresso cubes. I made some of these the other day in anticipation of the warm weather. I brewed espresso with my stovetop espresso maker. Then put it in ice cube tray and put it in the freezer.
This morning I just popped out a few cubes.
Added 2 tablespoons of my favorite cocoa powder, a couple splenda packets, a cup of unsweetened coconut milk and a half a cup of light vanilla soymilk.
Blended away in the Magic Bullet (although I’m sure it would be better in a Vitamix…… I’ll keep dreaming). Then put it in my Starbucks cup and put a little dollop of fat free Reddi Whip on top so I could feel cool.
Whoo hoo!
This morning was busy, busy. After our workout we went to the mall. I had to return something to Victoria’s Secret (return something?-That’s weird. ha!). Those new bras they have (that add 2 cup sizes) are NO joke. (I bought one. It was on sale and I am in serious need of some new undergarments and a little help in that area since the whole having twins thing. TMI? Sorry.)
When we got home I tried to get the boys to swing on the hammock with me.
They wanted to play with the hose instead.

Oh wait, one more thing. For the PB2 Microwave Cookie recipe I posted yesterday. You can sub in 2 tablespoons of regular peanut butter (or almond butter, Sunflower Butter, etc. for the PB2 powder and soymilk).
The recipe would look like this (I found the peanut butter version on Tina’s blog a couple of weeks ago):
- 2 tablespoons nut butter
- 1 tablespoon brown sugar
- 1 tablespoon egg substitute
- 1/4 teaspoon baking powder

I love dreaming about breakfast! That muffin sounds so good. My get up and go is the Keurig coffee maker we have. I was not a coffee drinker before I got married and my husband turned me into one. Now I can’t wait to get up and have my 2 cups of individually brewed coffee with breakfast and head to the gym. I had a recipe I thought you and the boys would like. It’s for raw chocolate pudding. Super creamy and delicious!
1 avocado
1/2 ripe banana
1/4 cup cocoa powder
1/4 cup honey
1 Tablespoon oil (calls for coconut but I use olive)
1 teaspoon vanilla
blend all ingredients in blender until smooth. you have to scrape down the blender a couple of times to get it smooth.
