I Think I Have a Problem

Well, actually I have a lot of “problems”, but really, I’m obsessed with this new microwave muffin thing. I can’t get my 3 minute banana muffin out of my head. During my run this morning I kept thinking about my muffin I was going to bake microwave when I got home. I was trying to think of different ways I could change it, etc. and I was hoping at least ONE of our bananas was ripe enough.


Well, I made do. I made the same 3 minute muffin as yesterday, but I subbed in coconut flour for the whole wheat flour and added a tablespoon of sugar free maple syrup because it seemed a little dry (probably due to the banana not being ripe enough). I microwaved it for 3 1/2 minutes. It puffed up more than the original version which was exciting because I like my servings BIG. Smile The texture was a little different, but the taste and smell were amazing! It seemed a little more dense and not as grainy. Um yeah, I will be having this again (and again, and again……….). I offered one to Andrew, but he just wasn’t ready to try my concoction. One of these days……. Smile

Here’s a look at breakfast after my run. (7 miles this morning- and it was hot. Ugh. I’m getting more and more nervous by the day for our 15k next week with the stroller.) I ate this morning’s microwave muffin with some Naturally More and some PB2 cottage cheese  with a blended mocha of course (1 cup light vanilla soymilk, 1/2 cup almond milk, 2 tablespoons my favorite cocoa powder, 2 splenda packets and a couple espresso cubes).



I thought I might be able to get a little computer work done while I ate my breakfast. But……..


Yes, that’s a table Joaquin is standing on and the whole bib thing was their idea, not mine. After scattering all the bibs from the drawer on the kitchen floor they came running to me with these in hand for me to put on. O.K. guys!

So… plan B  was smoothies and some SYTYCD. Smile

Smoothies of the day- spinach, blueberry yogurt, a couple frozen strawberries, a couple broccoli cubes, apple juice and vanilla soymilk.



I am trying to get this done really quick before naptime is over. Here’s a look at a couple fun meals over the past day or so.

Right now I just scarfed down a Flatout wrap with egg substitute, a Laughing Cow Light cheese wedge and a handful of spinach.


So quick and easy. I just sprayed a bowl with butter flavored cooking spray and added 1/2 cup egg substitute (60 calories). Put a little sea salt and pepper on it and microwaved it for about 3 1/2 minutes.




Put in in a Flatout with the cheese and spinach. Yum!! I love this quick snack. It had it all- protein, fiber, veggies. Just fabulous. Smile

Yesterday I had a little blueberry shortcake for a snack. Corn Vitatop, Chobani blueberry yogurt (from Costco) and fresh blueberries. Delicious!!!!



I couldn’t fit any more blueberries into my bowl so I froze the other ones I had rinsed off. Smile 


And just one more- a quickie salad I ate for lunch yesterday. Romaine, shredded zucchini, Costco rotisserie chicken, a little low fat ranch and TATS Original Ghost BBQ sauce. Mmmmm…..


Okay, I’ve got to get a couple of things done for STUFT Fitness and work on our website for buffalo jerky. (Yes, we have our own buffalo jerky- we’re all over the place. ha!)

Oh man, naptime is over. Grrr……… but we might go swimming this afternoon. I’m nervous- the boys have never been in the pool (and I can’t remember the last time I was in a swim suit). Ahhhhhhh……We’ll see what happens.

    Hi. I wonder if it would be richer, creamier if you added in some zero fat Greek yogurt into the banana muffins. Just a thought.

      Hmm….. I don’t know, but I’m definitely going to try it!!!!! You’re brilliant. I’ve used Greek yogurt in my regular low fat muffins I make, so it probably would work well. 🙂
