Low Fat Banana Muffins

Hello! Sorry I didn’t get to this recipe last night. I was busy staring at this.

Ugh. My DVR was NOT cooperating. I can’t even tell you how many times I had to unplug the DVR and wait for it to reboot. Sooo annoying. It just made me want to watch the darn show that much more. I finally got through MOST of it and got some good pictures of the cats during my wait time.

Even Kitty was annoyed. Ha! At least my stomach was happy though because I ate this MONSTER sandwich (turkey, Laughing cow light Swiss cheese wedge, red onion, tomato, avocado, jalapeño pepper, peppercinis, lettuce) with kale chips.

I made it on this bread from Trader Joe’s which was fantastic.

Okay….. on to the muffins. These are the muffins I make for Andrew and the boys and if I’m giving them to others. I have a different version (using whole wheat flour only, splenda and Greek yogurt) I use when I’m making a batch for just me (I freeze them individually wrapped for quick breakfasts).

This is an adaptation from a recipe in the Edgeley Cookbook. Mom grew up in Edgeley, North Dakota (an amazing, but very SMALL town). The cookbook is awesome and I’m sure I’ll be using more recipes from it. Ohhh…. the sugar cookies are the BEST!!!!!!

Low Fat Banana Muffins (or bread)

  • 1 1/3 cup sugar
  • 2/3 cup egg substitute
  • 4 bananas (mashed)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk or milk substitute of choice mixed with a little lemon juice (this is in place of buttermilk)
  • 1/2 cup unsweetened applesauce (I use a snack size individual package from Trader Joe’s)
  • 1-2 tablespoons oil (I only use 1)
  • 2 cups of flour (I use 1/2 whole wheat and 1/2 all purpose)
  • 1 teaspoon vanilla

Mix all ingredients together and pour in greased muffin pans. Bake at 350 for 20-25 minutes.

If you’re making bread this will make 1 large loaf or 2 small ones. Bake for 45 minutes or until done.

Hope you’re having a good day! I think Judah and I are coming down with a little something. NOT GOOD. It’s been a rough day over here. Why do they refuse to nap when you really want need them to take a good long one? Ugh.

    That recipie looks great. I wish I had some bananas, I would make it right now! As far as bachelorette, if I never hear the name Bentley it will be too soon. I love JP though!

    I spent last night frustrated with my DVR too!!! It would go for 5 min then shut off. I had gotten everything done that I needed to and was so excited to watch it!!! JP is my favorite too!
