Things are looking a little green around here.
Sorry. I just had to. Actually, if I was talking about the blog, things are “aqua”. He he. We’re making some changes. Have you noticed?
Anyway……………….. I feel like I can’t get this post up fast enough. I’m supposed to be a healthy lifestyle blogger and every time I went to my page today that picture of Papa John’s pizza boxes popped up. Oh man, it made me cringe.
Sooo…., I better get to it. Remember the microwave preview of the green muffin in this post? Well…. we’ve been consuming a lot of these since I randomly tried a version of it last week. It all started last Thursday because I wanted a muffin, but needed some veggies. Here was my thinking- “Hmmmm….we add spinach to smoothies all the time (just like yesterday’s breakfast espresso smoothie), so why not try it with the 3 minute banana muffin?”
Well, well, well. I’ve now tried it MANY times and most of them have been successful. I have 2 different versions for you today depending on what you might have at your house or your personal preference. I had another low-calorie version (with less ingredients), but I can’t find my post-it with my recipe scribbles right now, so I’ll have to try that one out tomorrow morning again. (Aw shucks).
How can I lose such an important post-it? Ummm……… well, things are getting more difficult by the day around here. The boys are getting into EVERYTHING!!!! Today, among the many accomplishments of the morning, Joaquin found a new place to lose a straw.
After the umpteenth “Uh Oh”, I realized the straw was in the fireplace. How in the heck did he find that hole?
And…. no wonder I buy these Costco wipes in bulk. (I promise all those other scattered toys were put away about 5 minutes before this picture.)
At least I didn’t waste the wipes. Perfect for cleaning Kitty’s neck.
Okay……… so here you go. Three Two versions of the
Mighty Green Microwave Muffin
Mama’s Version
- 1/4 cup egg substitute
- 2 tablespoons light vanilla soy milk or almond milk (low fat milk will work also)
- handful of fresh spinach
- 1 banana
- 2 tablespoons of coconut flour
- 2 tablespoons rolled oats
- 1 tablespoon ground flax
- 1/2 teaspoon baking powder
- splash of vanilla (or almond extract)
- 1-2 splenda packets (I use 1)
Blend egg substitute, soy milk and spinach.
Add all other ingredients and stir.
(Coconut flour absorbs a lot of liquid so the mixture gets really thick.)
Pour into mug sprayed with cooking spray.
Microwave for 4 minutes. (You may need to adjust microwave time. Ours is OLD and takes a long time.)
Whole Wheat Toddler Version
- 1/4 cup egg substitute
- handful fresh spinach
- 2 tablespoons soy milk (low fat milk or other milk alternative will work also)
- 1 banana
- 1/4 cup whole wheat flour
- 2 tablespoons oats
- 1 tablespoon ground flaxseed (you can omit this if you want)
- 1-2 teaspoons sugar
- cinnamon to taste
- splash of vanilla
- 1/2 teaspoon baking powder
Blend the egg substitute, soy milk and spinach. Add all other ingredients and stir.
Pour into a large mug sprayed with cooking spray.
Awww… look at the mug I used this morning for the boys’ muffin. Doesn’t it make you smile?
Microwave 5 minutes. ( I had to microwave a little longer for this one. Also, the whole wheat flour makes this muffin really dense. Delicious, but dense.)
I can’t wait to try these out with a few chocolate chips. So many things to do. For now though, they can be enjoyed as is.

Or…….. with a little PB2 cottage cheese on the side (for Mama).
Or if you’re feeling really adventurous (and hungry) you can top it off with some peanut butter or Naturally More like I did here. Mmmmmm……

stumbled on ur site recently and am loving the toddler and adult recipes…just made the might green muffin…wow…so yummy….and mad my toddler boys the chocolate spinach milkshake this morning and they loved it…thanks for the great ideas! I want another muffin now:-)

gonna blame my euphoria from the muffin on my previous grammatical errors:-) Boys are 2 and 4….and non-stop craziness! I do boot camp here (wish I could take yours) and that is my release! Just got some flatout wraps (which I have looked at 100x in the market, but was never inspired to buy until I saw the pic of your wrap) and made your egg and spinach wrap (except cooked the spinach in with the eggs in skillet) and dipped it in siracha…awesome. My 4 yr old has a peanut allergy, so we love sunbutter and looking into your use of sunbutter for some new ideas….have you made cookies with it? I have and they are awesome. Also, have you ever made a batch of green muffins in the oven? I may try this weekend…
Haven’t tried a batch yet. Definitely on my list though. I’ve been freezing too many bananas for smoothies lately. ha! Oh man, I MUST make some cookeis with the SunButter. What’s your favorite? 🙂
I love this so much! But I cannot have eggs! Is there anyway I could use a flax “egg” or chia “egg” in it’s place? 🙂 By the way – great blog 😉
