It’s Not Easy Being Green

A quick side note since the “Its Not Easy Being Green” title is from Kermit’s song. I freaking LOVE the Muppets. Beaker is my absolute favorite character and I can actually do a pretty mean beaker face, but I’ve save it for later.

The boys and I listen to Kermit’s Rainbow Connection every night before bed (after reading a book and saying prayers of course). Here’s a little gift from me to you. Smile

Anyway……. I’ve been making different variations of the green microwave muffins every day. Luckily my boys haven’t put up a fight yet.  Here are 2 new variations that have less ingredients and are even easier (and lower in calories) than the original Mighty Green Microwave Muffin (MGMM).

MGMM- Just your Basic Lower Carb/High Fiber Version for Mama

  • 1/4 cup egg substitute
  • handful fresh spinach
  • 2 tablespoons of vanilla soy milk (can use low fat milk or different milk substitute)
  • 2 tablespoons coconut flour
  • 1 banana
  • 1/2 teaspoon baking powder
  • 1 splenda packet (or other sweetener)
  • splash of vanilla
  • cinnamon to taste

 

Blend egg substitute, soy milk and spinach until smooth. Add all other ingredients. Mix together to form batter. Pour in mug sprayed with nonstick cooking spray. Microwave for 4 minutes. (You may need to adjust microwave time.)

And….. I guess it “changed” it up a bit. (I was afraid this was going to happen because this mug was smaller that the other ones I’d been using.)

And even better with the addition of some PB2 cottage cheese.

Well, now that’s just perfection (with the espresso cubes version of my favorite morning mocha). That was yesterday’s breakfast.

This morning I added a couple of squares of this protein bar into the batter.

And it worked marvelously. Then topped it with some Naturally More cream (1 tablespoon Naturally More and 1 tablespoon soy milk blended together) and some PB2 cottage cheese. It was decadent.

When I was making one for the boys I got a little distracted.

I made them the basic Mighty Green Microwave Muffin, but forgot the oats, sugar AND the flaxseed. But……… it still totally worked and they loved it just the same.

Maybe it had something to do with the semi-sweet chocolate chips I added to the batter.

Before I go- more noteworthy green favorites lately are these teas.

The first one is great to brew and then serve as iced tea. The matcha powder (on the right) is great for making green tea lattes at home (and saving $4 that that Starbuck’s ones cost).

    i finally made your green microwave muffin – the lower cal version and omg it will be a staple breakfast/lunch for me. even with the PB2 topping (i think i go through a jar a week!) it’s under 300 calories…amazing and filling and delicious. thank you for the recipe! (and PS have been eating your stuft frozen yogurt every weekend…!!!)

      Hi Randi! I had that exact version for breakfast this morning. Isn’t it awesome! And for about 200 calories it can totally be topped with some fun stuff too! 🙂 He he!
