Just One of Those Days

 

This morning was a little frantic. I woke up late and was a little sleepy after staying up WAY too late, but thought I could get myself together. I ran out of time for breakfast so I whipped up what’s becoming my new favorite morning smoothie:

Mocha Madness Smoothie

  • 1/2 frozen banana
  • handful of spinach
  • 2 tablespoons of my favorite cocoa powder 
  • 1 scoop protein powder (I used Designer Whey vanilla almond)
  • 1 1/4 cup unsweetened almond milk

And attempted to put together some oats to chill while were were out and about. Oh nice- all over the microwave. I guess that didn’t go so well.

We were off to Strollerwise and then to the Dr. for the boys’ 18 month appointment. I was soooo THAT mom. We were totally running late, the boys didn’t have shoes on, blueberry stains all over their shirts (and mouths), snacks were somewhere in the bottom of my backpack, Joaquin was rocking his crazy hair and his shorts were soaked from his water bottle, and I was a sweaty mess……

Don’t they look excited? Ha ha ha! It actually went pretty well. Thank goodness because I was by myself. Joaquin only managed to get his fingers on the doctor’s computer keyboard once.

They did such a great job I felt they needed a little treat. I knew just the place.

We loaded up on some GOOD stuff. I don’t recommend shopping at Trader Joe’s when you (or your kids) are hungry. Oops. We really only needed a few dinner options, milk and broccoli slaw, but $100 later we had a lot more. (I even had two people come up to me asking if I needed an extra cart or some help. Umm….. no. What I needed was to get the heck out of there before I bought anything else.)

I’m compiling a list of all of my Trader Joe’s favorites for a post to put in my “Favorites” section, but here’s some note worthy purchases of the day.

Trader Joe’s unsweetened vanilla almond milk is my favorite and it’s the cheapest around. I got the stevia to experiment with. maybe I’ll sub in some stevia for splenda in some recipes. Smile

I got home to find those dang oats from this morning sitting on the counter still. Grrrr….. I threw them out and while I was trying to make batch number 2 someone helped himself to a little sample of the old ones with his stick.

So gross. I caught Joaquin with that stick in his hand and in his mouth. It was like a little “fun dip”- dip in the trash and get some oats- lick them off the stick. I had to move quickly to get that situation under control so there are no pictures of him in action (just the trash-sorry).

On to oats number 2.

1/3 cup oats (I used Coach’s Oats from Costco), 3/4 cup soy milk and 3/4 cup water- microwaved them in a BIG dish for about 4-5 minutes.

Then added 2 tablespoons of PB2, 1 tablespoon chia seed, 2 splenda packets, and 1/2 cup FAGE 0%. I also added a little cinnamon and a couple drops of liquid Stevia and put it all in the Naturally More jar (it barely fit).

I put the lid on and put it in the freezer instead of the fridge (I was a little impatient). And in about an hour I had this.

Ha ha ha! I was eating at my messy desk again. I really should tidy up for the pictures. Oops.

These were soooooooo good. I think they might be my favorite yet. I didn’t miss the banana at all and the yogurt made it really creamy. You could totally make this without the yogurt also (my first batch didn’t have yogurt and still thickened up quite nicely even though it was sitting out on the counter).

Mmmm……..

Okay, I’m going to work on my Trader Joe’s list and hopefully can post it tomorrow. I’m tempted to fly my “freak flag” tomorrow too (not that I haven’t already).

    That trash thing reminded me that when my daughter was about 3 or 4, we were at her older bro’s little league game. My daughter and a little friend of hers were just hanging out and I was just chatting with other moms when I asked if anyone knew where Gen was… Oh, spotted, eating old birthday cake by the fistful out of a garbage can with her friend that someone has thrown out earlier in the day. OOPPSS! Yeah – I can’t imagine why i keep missing the cut for parent of the year.
    Also can’t wait to try the new oats! Very excited. Thanks for posting the recipe.

      Cake out of the trash can? Now THAT is awesome! I’m sure I’m not far away from that. ha! I really think you’ll like the oast. I’m totally serious when I say that I think of you when I’m making these new things in the kitchen. I might try some green ones today.

    your smoothie looks great and i just posted about that tj’s coconut milk the other day, too

    regarding the stevia, it’s fine…not my fave. i truly love nunaturals for stevia the best but tj’s works…in a pinch. but if you’re a stevia newbie you may want to experiment with brands :)

    have fun this weekend. nice to ‘meet’ another san diego blogger!

      Good to know about the stevia. I’ll have to try out some other brands. I bought some liquid stevia from Henry’s (vanilla creme flavor). I’ve used it a couple of times. Thanks for the tip and thanks for warning me about the crowded weekend. That’s so me to pick a busy weekend without knowing. ha!
