Discovery Zone

 

We got to stay home for most of the day today (which is unusual). What I always think will be a quiet, relaxing, productive day turns out to be quite the opposite. But, life would be boring if it was any different, right? I’ll spare you all the details and just share some highlights.

Today’s discoveries:

Beanie Babies may be making a comeback. (And it’s okay to just hang out in Huggies Jean Diapers without pants if your not expecting visitors.)

Even though they want to help, these guys aren’t quite ready to change their own sheets.

But they sure are good at making it difficult for me to change mine.

Stinky kitchen sponges can be washed in the dishwasher. Who knew?

The morning is never complete without at least one mess to clean up and a couple of “Oh No”s to go with it.

The table doubles as a stage in less than 20 seconds. (Pretty much the exact amount of time I need to use the Magic Bullet.)

There is no longer a “safe” place where things are out of reach.

I can NOT seem to get my microwave muffins under control.

My iced mocha never disappoints me.

PB2 combined with light vanilla soy milk (instead of water) makes an amazing paste that can go on top of anything. It especially goes well on top of a green microwave muffin (made with 1/2 cup egg substitute instead of 1/4).

Either I’m getting weaker, or the laundry baskets are getting heavier.

A little bit of heaven SunButter a day keeps “grumpy mama” away. (Today it was on my favorite bread with some delicious Rainier cherries on the side and a Power Crunch Choklat bar (which I got from All Star Health).

Sometimes it’s the simple pleasures in life (like spitting the cherry pits in a bottle) that make me smile.

Taking one sick boy to the doctor (while Tutu babysits the other one) is a piece of cake. Having only one toddler to keep an eye on is almost relaxing. Smile(Sorry, no pictures. It was a last minute trip to the doctor. Poor Judah has some serious “issues” going on over here.)

And….

It’s been WAY to long since I’ve had my BBQ chicken pizza for one with roasted zucchini.

And no matter how late it is, or how full I am, I can always find room for a Vitatop.

Tonight it was under one of these Nestle Chocolate Chip Cookie Bars.

And topped with a little fat free Reddiwhip (which makes everything better).

Just in case you want to try this. Here’s the recipe. Laughing out loud

BBQ Chicken Pizza

pizza crust (Flatout wrap, naan, etc.)

rotisserie chicken

BBQ sauce

red onion

zucchini

jalapeño (optional)

sea salt, pepper, garlic salt, cayenne

pepper jack cheese (or plain Monterey jack or cheddar jack cheese blend)

Combine cut up rotisserie chicken with BBQ sauce. I use TATS Black Dahlia sauce (which is amazing and HOT), but any BBQ sauce will work.

Put chicken and sauce mixture on pizza crust (dough) or Flatout wrap, etc. (Trader Joe’s wheat pizza crust works really well for this.) Top with sliced zucchini, red onion and jalapeño. Add a little salt, pepper, garlic salt, garlic powder, cayenne (optional) and red pepper to taste.

Top with cheese of choice. I used to make this without cheese and it’s just as good. Tonight I used a slice this.

I tried to make a little calzone with the Flatout.

Bake at 400 for 10-15 minutes.

    I love the light Italian Flatout wraps- just found them for the first time a couple of weeks ago. I sprinkle mine with chopped onions, garlic, pepper, sea salt & then top with pepperoni & mozarella & just nuke it for a minute, fold & enjoy! Love the chicken pizza idea- I think I’d add some alfredo sauce or perhaps just olive oil & garlic & some spinach as well… The sugar free Vita tops have not been in stock 2 days now at my local Target- I am not out yet though, but I live in fear of it…lol…

      Oh man, I have never treid the Light Italian flatouts. I’m to cheap and stick with my multi-grain I buy in bulk from Costco. Maybe I need ot hunt those down though. your additions to the pizza sound FABULOUS! :) And your Target better stock up soon! ha!
