Living the Green Life

Living the Green Life

This title makes me thing of this song (which is awesome and make me in the best mood).

Green Life= Good Life 🙂

Well, sometimes, “green” is NOT good (especially first thing in the morning).

Sorry about that. What can I say- It’s my life.

We had a rough day around here yesterday (thank goodness for last night’s BBQ chicken pizza that gave me something to look forward to), but today things are looking up. So much in fact, that I think I’m making this Living the Green Life a 2 parter. Smile

My solution to the messy desk situation today:

Move to the messy kitchen table. SmileI’d rather look at Kitty instead of piles of bills, etc. wouldn’t you?

(Don’t mind the eye boogers. I pick them out every day, but they always reappear just when I want to take a picture. Wait, I guess it goes with the green life theme anyway. ha!)

On to some green things I’m just super excited about right now.

Today’s breakfast mocha madness smoothie with spinach.

However, my Magic Bullet is not doing the job lately. That is not good. It’s not the same when you’re drinking clumps of spinach.

In the mix today:

1 frozen banana, 1 tablespoon instant espresso, handful of fresh spinach, 1 Designer Whey Almond Vanilla protein powder, 2 tablespoons cocoa powder, 1/2 cup vanilla soy milk and 1 cup unsweetened vanilla almond milk

Peas Smile

Not the ones you eat (today anyway), the ones you read. I got this package in the mail yesterday.

Gotta love Amazon. (Yeah, I don’t want you seeing my address. I’m trying to keep my life private okay.) Smile

Inside the box was two little gems.

I freaking love Bethany Frankel and her show. She is so inspiring with what’s she’s done the past couple of years so I totally want to read her book (and pretend that we’re best friends in real life).

Peas and Thank You is a MAGNIFICENT book by Sarah (Mama Pea) who started out with her Peas and Thank You blog a couple of years ago and turned it into something AMAZING. I so admire her and love her recipes and sense of humor. I secretly want to follow in her foot steps (blog, book, etc.). Nice “secret” if I’m writing on here, huh? Dumb Kristin.

I can’t wait to try all of her recipes. Look, even Kitty is excited.

That IS his excited face.

This wasabi powder on a new version of kale chips.

I just added a little to my kale chips yesterday for lunch and it was awesome! They went perfectly with my favorite veggie burger (topped with rooster sauce).

And, last but not least…….. another new version of kale chips that I just experimented with today.

Cinnamon Crunch Kale Chips

I used some leaves from a bag of Trader Joe’s kale. Put them on a baking sheet lined with aluminum foil and sprayed with butter flavored cooking spray.

Then I sprayed the kale with some more spray. Sprinkled a lot of cinnamon and added 1 1/2 packets of splenda (I probably only needed one).

Baked it in the toaster oven at 400 for 10 minutes. Even though the house smelled delicious, I was still hesitant that my experiment might not turn out as good as I had envisioned. But…………….

these did NOT disappoint.

I could not get them in my mouth fast enough.

And I paired them with a SunButter and sugar free raspberry jam sandwich on my favorite bread.

I love lunch! Smile

Don’t worry. I didn’t forget about my

Mighty Green Microwave Muffin obsession. That’s all about part 2. Green with envy

Check out this article on Parent’s Magazine about the 5 Power Foods All Kids Need. It made excited because pretty much every smoothie I make for the boys has at least 4 out of 5 on the list! Woo hoo!

STUFT Smoothies are AWESOME!!! I updated the Drinks/Smoothies page and will try to add more smoothie variations. I always forget because I’m usually just throwing stuff together. A really great one is the one in the

Summer Fun with SunButter Smoothies post (if you make the spinach version it’s power food approved). Check it out!

Hope you’re having a wonderful day! Thanks for reading!!! (I think of you as my close friends, is that weird?)

What should my next kale experiment be? Chocolate covered??????

I just bought Bethenny’s naturally thin book. Just need to start reading it. Hoping it works by osmosis at this point. I love her show. She is so witty and cracks me up. I also like to think we’re bff’s so you are not alone in that. Your posts always make me laugh. Was kitty licking the book, thought it was a kitty food cookbook?
