Living the Green Life part 2


Before I get to the good, oops, I mean green, stuff…..

Vitalicious is running a BOGO offer on their Deep Chocolate VitaMuffins. I don’t know about you, but when I get down to my last Vitatop, I start to panic a bit. This offer only lasts 1 more day. It’s on my “to do” list for today so just thought I ‘d share. (Disclaimer- I have no affiliation with the company. I just love their products and wanted to spread the news about this offer.)


Okay….. well, I know you’re tired of seeing it, but I just can’t get enough. My broccoli slaw spaghetti is getting better by the day night (late night actually). Smile

Look at this dinner last night.


Aren’t the sandwiches just so cute?


I sautéed a fresh garlic clove, a tomato and the broccoli slaw. Then added some chicken (still leftover from my afternoon of freezing awhile back) and some garlic powder, a little sea salt, lots of red pepper, dried oregano and dried Italian spices. Topped it all off with some fresh basil and some mozzarella balls. My cheese sandwiches were one with the Trader Joe’s bread with a Laughing Cow garlic and herb wedge, a Babybel Light, and a low fat Trader Joe’s string cheese and the other Flatout one was just You Can’t Believe it’s Not Butter spray and some garlic powder and parmesan. Oh man, good stuff. I’m getting hungry thinking about it.

Dessert was another one of these. (Trader Joe’s S’mores sandwich)


Breakfast was a quick mocha smoothie (frozen banana, tablespoon espresso powder, 2 tablespoons my favorite cocoa powder, 1/2 cup soy milk and 1/2 cup almond milk) before I headed out the door. I put it in a cool glass to change things up a bit.


In the middle of my 13 mile training run this morning (I have America’s Finest City half marathon coming up in 3 weeks) I was craving some serious French toast (with peanut butter and jelly). My mind wanders a lot when I run. Among many other things I was thinking about, this post came to mind.


oh yes, I did.

(Well, after I got this huge sweaty knot out of my hair anyway.)

Mean Green French Toast

1/2 cup egg substitute

a little vanilla soymilk

handful of fresh spinach

1 Splenda packet

cinnamon to taste

splash of vanilla (this actually got a little out of control and was more of a pour; oops)

2 slices whole grain bread (I used my favorite bread)

Blend together all ingredients (except bread- duh). Smile

Dip and cook in a pan sprayed with nonstick cooking spray. (I used butter flavor.)


Top it with your favorite things! Today it was PB2 mixed with soy milk, some Naturally More (because I couldn’t get enough peanut butter after my run) and some sugar free raspberry jam.


It might not look like it, but it was THAT good.

And as promised, the new version of the Mighty Green Microwave Muffin (MGMM).

I simply used the basic recipe, but upped the egg substitute and subbed in 1/2 cup canned pumpkin for the banana. A few of the spices are a little different also, but it was a hit (on more than one occasion).

Here you go:

Mighty Green Microwave Muffin- Pumpkin Style


1/2 cup egg substitute

2-4 tablespoons vanilla soy milk (depending on the flour you use or other ingredients you add/omit)

handful of fresh spinach

1/2 cup canned pumpkin

1 tablespoon agave (or 2 packets of Splenda for sugar free version)

1/4 cup whole wheat flour (or 2 tablespoons coconut flour for high protein/low carb version)

2-4 tablespoons oats (optional)

1/2 teaspoon baking powder

splash of vanilla

cinnamon to taste

pumpkin pie spice to taste

Blend egg substitute, soy milk and spinach together. Add all other ingredients. Pour in large mug sprayed with cooking spray.


Microwave about 5 minutes. (Cross your fingers it doesn’t over flow.)




Oops again.


One for the boys. (whole wheat flour, oats, agave)


One for mama. (coconut flour only, Splenda)


And if you’re really not feeling the “green” fun. You can always omit the spinach and then you have just a yummy pumpkin muffin (like I did for my pumpkin muffin cheesecake sundae) the other day. Smile

    I can’t wait to make this french toast, hopefully for sunday brunch after body pump! I also bought unsweetened coconut milk at TJ’s for the first time the other day. Guess what else I had in my house at the same time?…pineapple and run. Soooo, I made a skinny pina colada! It was unbelievable! I love coconut milk now. Thanks for the intro. to it.

    I just found your blog today from Tina’s post. Your sandwich looks really good. Where do you get the yogurt dip? That looks like something that I should try. I don’t have a sandwich maker, but I wonder if it would work in a George Foreman grill that I have.

      Hi Lori! Thanks for checking out the blog! I got the yogurt dip from Costco. I was a little hesitant because I’m not a “dippy” kind of person (I hate mayo, etc.), but this stuff is good! I’m sure it’ll work on the Goerge Foreman. Do you use your Goerge Foreman a lot? I wish I had one. I do love the sandwich maker though because it makes it in two little halves. I’m a little obsessed with it. ha!
