Getting Cheesy With It


Well, in more ways than one. First of all with The Bachelorette. I stayed up until 12:45 am watching it. What was I doing? Ugh.

I’m a little proud to say that I DIDN’T burn my broccoli last night though. Maybe I’m turning over a new leaf around here. Ha! I also had this microwave meal which was VERY impressive.


So impressive even that I copied the ingredients so I can try to recreate it. I can’t wait. Here was my Bachelorette meal.

Party time! Cheers (with water).


“Is that a phone in your shirt or are you just……..”

I followed it up with a ginormous bowl of dark chocolate cold oats with some

Cheesecake STUFT Fro Yogurt 

1 cup nonfat FAGE

8 ounces sugar free cheesecake flavored pudding mix

1/2 cup thawed Cool Whip Free

Combine yogurt and pudding mix. Fold in thawed Cool Whip Free. Cover and let sit in freezer for about an hour to an hour and a half.



And as always, I was a member of the clean plate bowl club. I wish they had a medal for that.


Today for lunch we took the crazy good Costco jalapeño yogurt dip  a step further and combined it with some light jarlsberg, some turkey and a fresh jalapeño. The boys got theirs on Trader Joe’s Tuscan pane bread (and minus the jalapeño).


Mine was in a Flatout and grilled up on the stove.



Okay, now I’m not proud of this, and I considered not showing you or writing about it, but then I’d be a fraud. I totally have days when I eat way too much and indulge in a few too many sweets. This afternoon I was craving some serious snacks. I know it was because I’m tired and so overwhelmed with everything I need to do. Sometimes it’s just easier to eat than tackle my “to do” list. I may need to move my new office back to the other room to keep me away from the kitchen. Ha!

Here was my BIG snack. Cinnamon crisps with PB2 and some Naturally more, 2 marshmallows and one of these bad boys.


I made some pseudo s’mores. And, I’m really trying to cut back on the Coke Zero, but today I really wanted one.


And a couple of hours later I even went for this.


A little mix of TJ’s light kettle corn, a couple animal crackers, freeze dried bananas and some trail mix. Oh man. My run might not be pretty tonight.  Please tell me I’m not the only one who overeats when they’re tired and stressed. Note to self- I HAVE to get a good night’s sleep tonight and I may need to scrap a couple posts in the next few days to tackle my MO before I eat the entire pantry (in my attempt to avoid my massive “to do” list).

Here’s the main reason for the “cheesy” title. The Bachelorette isn’t THAT cheesy, but if I see them open mouth kiss one more time I might lose it. Heck, I’ll even admit that I’m totally excited for The Bachelor Pad premiere next week. Smile

So…. here’s a recipe for some Cheesecake Overnight Oats. They are amazing. Thanks for the suggestion to try adding sugar free cheesecake pudding mix. I DID NOT eat these today (thank goodness). It was a couple of days ago, but just too good to not share. Mmmmmm…


Cheesecake Cold Oats

1/3 cup oats

1 tablespoon chia seed

8 ounces sugar free cheesecake flavored pudding mix

1/2 cup nonfat Greek yogurt

3/4-1 cup unsweetened almond milk (or other nondairy alternative)

additional sweetener (if desired- I added a couple of vanilla stevia drops)

Combine all ingredients, cover and store in refrigerator overnight or for a couple of hours.


I’m sure these are terrific plain, but I had to top them with some STUFT dark chocolate sauce.


Then mixed it to make a cute little swirl. Smile

    Holy cow does all your eats look delicious! So glad I found you and got you on my google reader…I think we come from the same taste bud family! 😉

    I love love putting sugar free jello pudding mix in my fage yogurt…omg so heavenly good. I just got on the overnight oats kick too…don’t know why it’s taken me this long to do it but i am in love. What a great idea to add the jello to that too, I’ll have to try it! I am loving all your recipe ideas and I can’t wait to try all these fun new concoctions! 🙂

    Have you tried TJ’s Dark Chocolate Caramel Bar with Black Sea Salt? Oh my word, so good! I meant to take a pic last night to put on the blog but I forgot, I’ll have to do it tonight so you can see 🙂

    All of your eats look so good! I’m trying to cut back on soda too. But I LOVE coke zero! It will be a challenge!

    I have that Kashi meal in my freezer; glad to hear it’s a good one. I also really liked the ‘mayan veggie bake’ or maybe ‘aztec…’ something along those lines. It had plantains and pepitas and was surprisingly good for a frozen meal.

    I had a bottomless pit eating day this week too – it’s nice to see you post about yours.

      Michelle- I know, it’s nice to know that other people have those days too. It makes us feel human. 🙂 I totally bought the Mayan Harvest Bake too (I’ve heard a lot about it, but hadn’t been able to find it anywhere). Which one is better?

    I can relate to eating when I am tired and stressed out. I have found that one of the things that helps the most is telling myself “you are tired, and that’s OK. You don’t have to eat” Of course, I’ve also been telling everyone that I need to find a better way of dealing with stress! Ah, it’s all a learning experience

      Carrie- Definitely a learning experience. I have actually just gone in my room a couple of times and laid down to let myself rest instead of letting myself turn to food. I always think that my body would appreciate rest better than overeating. 🙂 Wouldn’t it be nice if there was just a quick fix for stress? ha ha ha! i like what you tell yourself. I’m going to copy you! 🙂

    How do your oats look so huge?! Even when I use 1/2 cup in overnight oats it ends up so tiny! Or are those just small bowls….?

      Andrea- Too funny that you asked this because I’ve bene planning a post with my trick. They aren’t just small bowls. You have to increase the liquid. I’ll write a post on it tomorrow for you! 🙂 I’m what you call a “volume eater”. LOL. 🙂

    Hi there!! I have a quick question about this recipe: what do you mean by 8 ounces of pudding mix? Do you add the powder into the greek yogurt or do you actually prepare the pudding mix and make the actual pudding? Thank you!

      Hi Lani!!! YOU are too nice! 🙂 Yes, add the powder to the yogurt and mix. DO NOT prepare the pudding first. 🙂 This is such an old recipe. I haven’t made it in forever. Let me know how it goes!

    I know that it’s been awhile since you posted the Cheesecake Overnight Oats recipe, but I just discovered it on Pinterest. What exactly do you mean by an 8 ounce box of pudding? The entire box I have at home is only 1 ounces net weight. Do you mean half of a box, since the box makes 4 half-cup servings of pudding (when prepared)? Thanks!

      Ha ha. Yes it’s been awhile! 🙂 I’m pretty sure it’s just one serving of the powder. SO if you have a 4 serving box, use 1/4 of that. I better revisit this and figure it out. Ha ha. Let me know how it goes!
