5 Minute Chinese Dinner


I’m hoping this post will take about 5 minutes. It’s been a long day and I have to get my last long run in tomorrow morning before America’s Finest City Half Marathon in 2 weeks. I HAVE to get to bed at a decent time.

First, I just HAVE to say thank you to all of you who commented on my Carbo Closure post. I feel so blessed to have such amazing people who can relate to my “issues”. SmileThanks for letting me share so openly.

I made this the other night in a pinch for Andrew and the boys. Andrew was impressed (which is not an easy task sometimes) with my “fried rice”. So easy, so quick and so impressive. He he!


Instant “Fried” Rice

package frozen brown rice

tablespoon light margarine or butter substitute

mixed vegetables

minced garlic

chopped ginger

1/4- 1/2 cup egg substitute

soy sauce



Heat butter substitute in pan on the stove (I used Smart Balance Light). Add egg substitute. while egg is cooking add soy sauce.

Add mixed vegetables (I used a bag of a frozen vegetable blend from Costco), garlic and ginger to taste.


Add bag of cooked brown rice (frozen bags are at Trader Joe’s or Costco).


Continue to cook until rice starts to brown and vegetables are cooked.

DELICIOUS!!!! Tastes like “restaurant fried rice” (Andrew said it, not me). Smile


I topped it with some of this chicken (also from Trader Joe’s) for my men.


I’m not a big fan of the chicken because I’m super picky about only liking white meat, but it got rave reviews over here.

    How brilliantly easy! I’m not big on pre-prepared frozen meats, but this might be worth a try!

      Katy- You can make the rice and have it with just about anything. I’ve just added some shrimp or plain chicken to the pan before and mixed it all up with the rice. 🙂
