Staying in and Catching Up

 

Well, after our EXPENSIVE Costco trip yesterday, we’re officially “staying in”. That’s right. We have so much food in the house and I’m determined to not spend anymore money on food until we eat what we have. Want to take a look?

Holy moly. We could feed A LOT of people. My challenge is to just buy fresh fruits and vegetables for a little while until we eat all of our stocked food (or at least make a significant dent). I might have to get a little creative, but I think that’ll be a good thing.

Hmmm….. I don’t know if I have enough almond milk to last though.

Now for catching up……

I also wanted to share a couple of easy meals I put together the past couple of nights. A lot of the dinners I put on here are just what I eat late at night by myself (I teach aerobics classes 3 nights a week and get home late). I thought I should share a  few things I made for the boys and Andrew.

A couple of nights ago I put together a pack of Trader Joe’s single serving mac and cheese and some broccoli slaw. I just put them all together before microwaving it and added about 1/2 cup more water. I microwaved it for 5 minutes instead of 3.

Then added some cooked turkey dogs (I know not the healthiest, but we had them in our freezer and we’re “staying in”).

Again, not the healthiest, but the boys loved it and at least I know they got a few vegetables and so so easy. (Andrew did NOT eat this.) Smile

Last night I made up these raviolis from Costco.

Definitely not as good as the other Costco raviolis. Topped them with some marinara and some of this spaghetti seasoning I also bought yesterday.

Then, I thought I was brilliant because I made these cut little “sandwiches” for dessert for the boys.

Apple slices and SunButter. They were a big hit! Loved that they were bite size and like a mini sandwich. The boys ate them just like they would an oreo.

Last night I finished my Bachelor Pad “party” with some broccoli slaw spaghetti with some cheese sandwiches. I cooked up some kale and a garlic clove with the slaw before adding marinara and fresh basil.

Oh my goodness, this picture reminds me that I didn’t mention I bought Flatout wraps from Costco yesterday. Those are pretty much a given though. I buy them ALL the time. So many things to do with them. Cheese sandwiches, cinnamon crisps, sandwich wraps, etc. I eat at least one a day. And…. last Saturday I got these in the mail.

I thought I should share the love. Then I thought I’d share some pantry love too. I found some yummy snacks (when I was digging through there to see how much food we actually had).

I got these in a great goodie box from SnackAisle a little while ago. I love that website for healthy snacks.

    Hi there! I’ve been enjoying reading your blog for a few days now and have tried several of your creations using flat-outs and now I’m obsessed as well! As for my favorite yogurt topping I have to say naturally more PB!!! I put it on all flavors of yogurt (really on all flavors of anything 🙂 By far it is the best tasting peanut butter.     LOVE, LOVE, LOVE your blog! I was hooked as soon as I ready your guest post on FFF w/Tina. I got my free yogurt coupon and fav topping is any type of cereal (currently Fiber One squares) and fruit ( sounds so boring).

    I think its a great idea to keep on going w/daily life happenings. I can relate as I have an 18 month old daughter. I enjoy reading how other mothers fit it all in a day–meals, mothering, workouts, grocery shopping, cleaning, work, etc. I love your meal, snack recipe’s and ideas. I always am looking for heathly, creative, easy snacks for the little one. Also, maybe some more posts of the workouts you do, fitness and nutrition tips…its always nice to get new ideas or reminders.

    Keep up the great work, you are doing wonderful job on your blog. I look forward to the STUFT mama post everyday!

      Yay Becky- thanks! 🙂 You’re suggestions are just what I’ve been thinking. I don’t really write about my workouts that much and I should since that’s pretty much how I schedule my day and I like to read about other people’s workouts. Thanks for the advice!

    Are we talking frozen yogurt or regular yogurt? Frozen yogurt are carob sprinkles (No yogurt shops in NM have them, ugh!) and regular yogurt is granola w/o raisins:) I got my coupon too!

    I just got my free yogurt coupon! It is waiting patiently in my inbox to be printed. My favorite yogurt topping is fat free whip cream. It makes me think I’m getting a real treat. I agree with Becky on what we like to read in a blog. I made your green french toast and apple peanut butter “sandwiches” this morning and my daughter couldn’t get it in her mouth fast enough. She ate the first few sandwiches and with a mouthful asked for MORE! I could also not get the french toast in my mouth fast enough. Tonight for dinner we are having the “fried rice” you made the other night. I’m already drooling.

      Sarah- Let me know how the fried rice goes. It impressed Andrew and that’s not easy to do. Ha! Yay for green French toast. Love that stuff. I’m going to try to incorporate more workout stuff in here. I always like to see what other people are doing for workouts and I never really talk about it (which is silly since it’s my job). Ha!

    I really enjoy your recipes. I’ve got the muffins and fro-yo recipes marked to try soon. I’ve always loved my green smoothies, so I’m glad to find someone else who also enjoys them to get new ideas for mixes. (Plus, my son also loves them so it’s nice to see your boys enjoying them, too.) I like the mix of recipes with daily tid-bits about your life, kids, reality tv shows, etc.

    I’m keeping my fingers crossed to win! I already love the wraps and edamame but haven’t had it with the berries or any of the other products you listed. Would be excited to try them out.

    What an awesome giveaway! I got my free yougurt coupon. PB2 is my go to for topping my yogurt. I pretty much eat it on anything. I really enjoy your blog – I love reading the day to day happenings. Some nutrition info and exercise info would be really cool too. I love your flatout pizza idea…it looks great! 🙂

      Thanks for the advice! PB2 rocks the house! My new thing is mixing it with vanilla light soymilk and making it a little more liquidy. What do you do?

        I make this chocolate protein ice cream/smoothie and I use PB2 as a topping for that. I also put it on a brown rice tortilla with some banana slices and chia seeds. I love that stuff! I’ve never tried it with soy milk, but I’m going to. It sounds delish!

    Hi Kristin,
    Got my coupons! $1 off 3 is pretty awesome! I don’t usually put toppings on my yogurt, and because I’m not really good at sitting and eating, I drink it. I put it in a blender with frozen fruit,and a little stevia, and now I use cottage cheese too (thanks for that idea) and I’m out the door. But for those of you with little ones, you might want to try cutting a banana into 3 or 4 pieces and put a popcycle stick in it, roll in yogurt then dip into crushed nuts or granola…Who doesn’t like food on a stick?…..I do, I can walk and eat at the same time! Keep up the good work Kristin…we love your posts….Hey I thought maybe going to some local restaurants and finding some healthy choices might be fun! Where are they? take care

      Sandy- Brilliant! Bananas rolled in yogurt and crunchies? I just need some popsicle sticks. 🙂 God knows we have LOTS of bananas. Good idea about going out and finding some restaurants. Good excuse to find some good ones! Yeah, where are they? 🙂

    got my coupon…thanks! ya know – I’m a pretty plain jane yogurt kinda gal. If it’s truely Plain yogurt, then fresh fruit for sure. I used to do granola all the time, but not lately. Excited to try these new flavors. and I do like the looks of your different yogurt toppings…need to expand my pantry (while your thinning yours out) ;o)

    LOVE your blog…love all the daily stuff…recipes, kids, workouts, costco, TJs, etc. I buy the Flatouts at Costco now…YUM! I need to get one of those sandwich maker thingys you have. And, I want to try those apple/sunbutter sandwiches too. Would love to see a big ole list of toddler friendly food.

    My twin boys are now 16 months old… I need to get them on the smoothie bandwagon (with spinach and/or steamed/frozen veggies.) I make banana shakes with protein powder for myself and my 3 yr old all the time.

    k – need to leave work and drive home…blech.

      Joanna- good idea to just put a list together of toddler friendly food. The sandwich maker- LOVE it! I actually have 2 because I don’t like mixing my sweet sandwiches with my non-sweet ones. I make the messy sweet sandwiches (bananas and PB, etc.) iin the old one. 🙂 You will love it!

    Done!! Ok, so I am now officially obsessed with Flat Out wraps too!! I was just using them for sandwich wraps, but just started venturing out this week. I made a flat out quesadillas with refried black beans and a laughing cow cheese. Scrumptious!! I am actually about to try your cinnimon crisps after I finish this post. Baby is down for the count and I have a spare moment, which doesn’t occur often as you know. Ha!
    Anyway, my favorite yogurt topping is blackberries or strawberries. Kind if boring, I know. Lol. As for what I like to read about…. You’ve already hit the nail on the head! Love your recipes, they keep me motivated. Partly thanks to you, I am now 10lbs under my pre-baby weight! Yay me! Lol. And I LOVE LOVE Loooooove the updates and daily shenanigans of the boys! It Keeps me informed of what I have to look forward to. Haha!!!! And I get a good chuckle everyday! Thanks for being part if my daily, Kristin. 🙂

    I love to eat my yogurt with granola, it’s my favorite. I also love to eat it with my huge banana nut muffin or blueberry/ straw muffin. I will heat them up and then dip the yogurt with them. So delicious!!
