Shoulda Woulda Coulda


Or is it Coulda Woulda Shoulda? I always get confused.

Anyway…. I should have given myself time to eat my overnight oats in the jar this morning for breakfast. Instead I spent too much time on the computer and had to have a morning mocha smoothie while getting the boys out the door.

I had a Trader Joe’s Chicken burger with a little jalapeño yogurt dip, a jalapeño and a lettuce bun after Strollerwise to tide me over.


Meanwhile the boys attempted to eat their Trader Joe’s veggie dogs.


But drank most of the smoothies instead.


In the mix today was spinach, raw carrots, cottage cheese, frozen strawberries, apple juice and vanilla soy milk.


Then, when the boys went down for their nap…….. my little friends came out to play.


My overnight oats in the Naturally More jar from this morning and a deep chocolate VitaMuffin. Mmm…..


Hi friends!

I should show you a picture of my dinner (shredded zucchini/broccoli slaw spaghetti) with cheese sandwiches, but I think you’ve seen that enough times.

I should be telling you about this deliciously rich (and healthy) chocolate fudge I’m eating right now, but I’ll save it for a later time.


Okay, for the main reason for this post.

The other week I was having my friend over for lunch. Let me just say that I’m pretty much in sweaty workout clothes at all times so impressing people with my looks is usually out of the question.

I had an idea.

Maybe I should have taken a shower, but instead I made these from Mama Pea’s new Peas and Thank You cookbook.


I’m pretty sure my friend was so excited about these that she didn’t noticed I looked like this.


Or that my kitchen was a mess.



That’s what happens when I bake.

Kitty, on the other hand, was not as excited. He must have known he wasn’t getting any cookies.


These Peanut Butter Cookie Dough Balls are nothing less than amazing.


I kept some as is (in dough form) in the fridge. (Okay, so maybe I ate a few of these.)


Then transferred some to the freezer thinking I could trick myself into keeping them for a special occasion.


Ha! Well, I laugh in the face of tricks. They only lasted a couple of days in there.

For the ones that actually made it in the oven……


there are just no words


because these are THAT fabulous.


Um, yep. No words. That about says it all, right? Oh wait, someone else got his hands on the balls.


Can you name this hand? (Really sad that I didn’t even notice this wasn’t my hand until I looked more closely. I really need to paint my nails or something.)

I didn’t even follow the recipe exactly because I didn’t have peanut butter chips. I just subbed in some extra chocolate chips instead.

I should have given my friend the big plate of cookies to take home, but instead I kept that one for the STUFT house and gave her the small one. I am not a very good friend.

I should have not consumed as many dough balls as I did in that 48 hours they lasted in our house.

Oh well. Shoulda Woulda Coulda.

    Have you ever tried Jalapeño Jelly? Its sounds kinda weird but it is pretty good. I like to eat it on top of frenchbread and cream cheese. lol I know… not heathy at all, but it tastes so good.

      Best cookie, simple Peanut Butter thin…made into sandwich with German Chocolate icing center…in honor of my baby brothers upcoming 50th bday…ships better than German Chocolate cake…and he can carry them fishing…

      To Scott Arnett: Just made Jalapeno NecterPeach Jelly and I use it on sauted Salmon or Trout…mmmm..so good….love the freshness and the little bite it gives to sauces……you can find a simple recipe on the Pectin box in the store…

          Scott …yes it works….we have a NectorPeach tree that all fruit ripens in a short period of time..I tried to freeze the fruit and bake with it, it didn’t hold up to either…so I thought what do I have to loose…so I made a puree with the fruit…made jam and the Jalapeno pepper jelly….I used the jar chopped Jalapenos and added a little green food color for effect….you can make the bite to taste..there are simple recipe suggestion on Pectin box…good luck…think you will enjoy…

    My fav cookie is the good old fashioned Nestle Toll House Cookies that comes right on the bag of their chocolate chips…I think they’re the perfect chocolate chip cookie and it brings back so many childhood memories whenever I smell them wafting through the kitchen 🙂

    Following you on Twitter! Dude, I’m way impressed that you’re so active on Twitter…we pretty much “had” to get on board with the social media train for work and Twitter is definitely not my friend. Trying to learn it seriously made me feel like a grandma learning how to use a computer for the first time. I just don’t understand all these tweets with 5 hashtags, 2 handles and a bitly link all crammed into 140 characters – how do people read tweets like that? And it gets even crazier – do you use TweetDeck or HootSuite? Ha. That’s one further step into crazy Twitter town. And yes, I’m in my 30’s (I still claim *early* 30’s) and I don’t understand Twitter. 😉
