Oh Fudge

 

We don’t say “potty words” around here. There’s no need for “ear muffs”. (If you’ve seen the movie Old School that will make sense.) We just say “fudge” instead of other not so appropriate words.

“Oh fudge.”

I know, I was upset too. I used up the last of my favorite Hershey’s Special Dark Cocoa Powder last week.

And since we’re “staying in” and all (and my stock up and save Amazon order is due this week), we’re not doing anything about it. Let’s just make the best of the situation shall we?

I have so many fun things to share this week and it’s starting tonight with some fudge! I’m feeling a little bit better today after a LONG day of America’s Finest City half marathon race recovery yesterday. It’s amazing what a full night of 8 1/2 hours of sleep can do.

Remember that delicious chocolate fudge I was eating all last week?

Well, I do. In fact, I can’t stop thinking about it and how amazing it was and how many different versions I want to try.

That also happens to be the reason I’m out of my favorite cocoa powder. But, it was worth it. I got the recipe from Chocolate Covered Katie. I was all about experimenting with healthy desserts last week so I didn’t indulge before the race.

I tried this fudge once and then of course had to experiment a couple more times with different ingredients. Now I’m out of ripe bananas (and the cocoa) though so I’m taking a little break.

It probably won’t last long, but long enough to share the few variations I tried.

All these variations are inspired from the original recipe of

Chocolate Covered Katie’s Chocolate Peanut Butter Fudge.

 

Better’n Peanut Butter Chocolate Fudge

1/2 ripe banana

2 tablespoons Better’n Peanut Butter

2 tablespoons Artisana Organic Coconut Butter

2 tablespoons Hershey’s Special Dark cocoa

pinch of salt

Mix all together in bowl until smooth. You can use a blender or food processor, but if you’re like me and have sleeping children that God forbid you better not wake up, mixing by hand (or fork) works just fine. Smile

Cover and freeze.

Feel free to eat right out of the bowl.

What the? What can I say? (“Oh fudge” perhaps?) It was THAT good, I couldn’t even wait.

Recipe note- You can add additional sweetener if you want. I didn’t think it needed it, but everyone’s tastes are different and having a really ripe banana is key.

This entire thing has about 380 calories and 20 grams of fat (the good fat though).

The second time I tried it with SunButter.

SunButter Chocolate Fudge

1/2 ripe banana

2 tablespoons SunButter

2 tablespoons coconut butter

2 tablespoons cocoa powder

pinch of salt.

I didn’t do as well of a mixing job. If only they had a silent Magic Bullet. Ha!

This one was higher in fat and calories than the other version (about 480 calories and 37 grams of fat) because of the different nut butter. It also hardened up a little more. I had to cut it into chunks which made it more like eating frozen fudge cake (or cubes).

Oops. It didn’t stop this from happening though. Ha ha ha!

I also tried the following variation, but didn’t take any pictures.

 

Lighter Almond Chocolate Fudge

1/2 ripe banana

2 tablespoons unsweetened applesauce

1 tablespoon almond butter

1 tablespoon coconut butter

2 tablespoons of cocoa powder

pinch of salt

Splenda packet

 

This version did the trick although the other two versions were better. I liked that I could eat the whole thing (which I most definitely did) for about 310 calories and 18 grams of fat. I had to add a little sweetener to it though. It wasn’t as rich and didn’t set as well, but it was still really good.

I can’t wait to try it with Naturally More and some PB2. Hopefully these bananas will ripen up soon.

    Oh my goodness that looks insanely delicious, I can’t wait to try it! And for only that many calories, that’s awesome. One day I need to dedicate a Stuft Mama day solely to making all your delicious recipes! ;)

      Erin- well, my favorite recipe so far is this one- http://stuftmama.com/2011/09/01/my-new-obsession-chocolate-fudge-pie/ . I like it with peanut butter or with PB2 and then add a little almond or soymilk. I like this version because I feel like I can eat the whole thing. You will LOVE coconut butter. They have it at Jimbo’s. The other original version is REALLY good too, but it has about 200 more calories in it. I can’t taste that much of a difference so I go with the lower calorie option. Super rich and satisfying. :)
