The Bachelor Pad party was cut short last night. I just continued it tonight. Same time, same shirt (hmm.. that’s weird),

STUFT Tomato and Red Pepper Soup with cheese sandwiches 

Tonight it was my reward after my treadmill run. It’s always nice to look forward to something afterwards. 

Well, since I’ve had a day or so to recover from my America’s Finest City Half Marathon, I’ve come to my senses and signed up for my next race. The Silver Strand Half Marathon is in November and it’s one of the few that allow strollers. I ran it last year with the boys, but they were a lot lighter. Next week I’ll start training with the double BOB for a bit.

Okay, so I’ve been having some serious sugar cravings lately. I’m sure it’s because I’m trying to stay away from sugar (that always happens). I’ve been doing a pretty good job of figuring out ways to indulge on healthy versions of some of my favorites. I’ve done a couple more versions of the dreamy chocolate fudge from yesterday’s post. I can’t wait to share. Mmmm……. I may have a problem.

Ever since my pregnancy I’ve had a thing for frosting. Anything covered in frosting is just fabulous.

Love frosting- hate the calories, fat and sugar.

So….this past week I’ve pretty much been topping all sorts of goodies with this Creamalicious Frosting.

It makes a giant serving for about 90 calories. It’s definitely not your buttery, sugary frosting, but it does the trick.

Creamalicious Frosting

serves 1 STUFT mama (maybe two normal eaters) and pretty much covers a giant muffin (or two)

2 tablespoons fat free cream cheese

1 tablespoon coconut flour

3 tablespoons nondairy milk (I’ve used vanilla soy milk and unsweetened vanilla almond milk)

sweetener of choice (I’ve used both Splenda and liquid stevia and they both work fine)

splash of vanilla (optional)

Mix all ingredients together in a small container if your kids are sleeping (I just use a knife) or blend together in a food processor (If the boys are up I use the Magic Bullet).

Spread to your heart’s content. Smile

I’ve been spreading the frosting (and love) all over my Zucchini Flaxseed Muffins.

Obviously I’ve eaten this a few times since I made these muffins last week. He he!

And did you spot that oatmeal cookie in this last picture? Oh yes, I’m obsessed with those right now too.

Holy moly.

I’m also going to be a good girl and go to bed before midnight tonight. Yay! I’m convinced getting enough sleep is going to be key to being a little more comfortable in the jeans I tried on this morning. (No, not those jeans, a different pair sitting in my drawer with tags that will be perfect for the fall.) Ha!

I think this guy could use a little frosting too (and a bath).

    Yay for your next race!!!! And you amaze me running with the jogging stroller. I only use mine for walks. LOL

      Oh man, thanks Tina. I always have to have something to work towards. I’m a little nervous about this one though. And walks are hard work in themselves with stinking strollers. ha!

    I am going to buy coconut flour right now! I love frosting and can’t wait to try it on the zucchini muffins I made. When my daughter is taking a nap and I need to blend something, I take the blender out to the garage.

      Sarah- OMG you have got to get some coconut flour. It is so fun! Joaquin could not get enough of this frosting this morning. And….. if we only had a garage I would totally do that. I guess I could go outside or in the workout room. Tomorrow night…….. :)
