I’m ready to play
the game “Flat Kitty Friday”.
Someone decided to follow me to the gym last night when I taught my class. At least he’s ambitious.
I was surprised too since we had had such a long afternoon together by ourselves at home. I got work done and cleaned, he just wanted to be held.
play around with Nala.
Sip some of my water.
Tease me that my bananas aren’t ripe yet.
Taunt me into the scary room that hasn’t been touched in months.
Try to play the “Where’s Flat Kitty” game (similar to “Where’s Waldo) inside the room. Can you find him?
(I finally did after I wiped away my tears of being overwhelmed by the room. I had to humor him and play his stupid game.)
I thought that might be it for the day.
I was wrong.
He proceeded to find my special box of Coach’s Oats goodies.
And try on my new AWESOME shirt.
That is NOT for you Kitty.
But, he DID give me an awesome idea.
We have a lot more where that came from.
We love Coach around here (not to be confused with this guy) and we really love this Coach’s inspired oatmeal cookie.
Put Me in Coach Oatmeal Cookie
1/3 cup Coach’s Oats
1 tablespoon whole wheat flour
1 tablespoon unsweetened applesauce
1 tablespoon nondairy milk
1 tablespoon nut butter
1/4 teaspoon baking powder
splash of vanilla
cinnamon to taste
-You can also use regular oats.
-I used Naturally More peanut butter as my nut butter, but have tried it many different ways.
-I also made a PB2 version to try to cut some calories which worked well.
(I used 2 tablespoons of PB2 for the nut butter and added an additional tablespoon of applesauce.)
-You may need to adjust the amount of applesauce or nondairy milk.
(Regular milk should also work.)
-Feel free to add chocolate chips, white chocolate chips, etc.
(I want to try one with a handful of trail mix. Wouldn’t that be delicious?)
Combine all ingredients in a small bowl until moistened.
Form into large cookie on parchment paper or lightly oiled cookie sheet.
Bake at 350 for 8-10 minutes.
So yummy (and big) that you might have to share a bite.
But only because you felt bad for a little teasing earlier.
PS- This cookie will be back because I’ve made MANY different versions with instant oatmeal packs and different nut butters. Stay tuned.
