My New Obsession- Chocolate Fudge Pie

Hilarious, right? I’ve given that card more than once to people for their birthday. And today might not be your birthday, but I hope you like Chocolate Fudge Pies! Smile

I know I wrote a post last week with a few variations of Chocolate Covered Katie’s Chocolate Peanut Butter Fudge.

I don’t think it’s a serious problem yet, but since my “Oh Fudge” post I’ve been loving this fudge a little too much. I had to find a way to cut the calories and fat down a bit. Chocolate Covered Katie”s fudge is to die for, but if you’re like me, you’ll want to eat the entire pie in one sitting.

I came up with a solution.

I subbed in some unsweetened applesauce and came up with a lighter version that is almost just as amazing and about 190 calories less.

 

Chocolate Fudge Pie

Recipe makes one big pie- serves one STUFT mama or maybe 2 “normal” eaters

1/2 of a ripe banana

2 tablespoons cocoa powder

2 tablespoons unsweetened applesauce

1 tablespoon coconut butter

1 tablespoon nut butter

pinch of salt

Mix all ingredients together in blender or food processor. (I used the Magic Bullet if the boys were awake and mixed by hand if it was nap time.)

Pour into freezable container. Cover and freeze for a couple hours.

Then……..

Admire your creation (finger smudge and all).

Cut into pieces (if desired).

Eat it alone.

Or top it with some Peanut Butter Coco Cream.

This can also be eaten as a cold pudding or used as a frosting when chilled in the refrigerator .

Or even cut up into little fudge nuggets.

And eaten with a teeny tiny fork.

Today’s version had Naturally More as the nut butter of choice.

But, feel free to experiment with different nut butters.

(I’ve tried them all and they’re all fabulous.)

The entire fudge pie has about 300 calories. It’s a good thing because I eat the whole pie at once.

It actually looked a little something like this after the photo shoot today.

Why I thought it would be a good idea to place fudge nuggets in the grass I don’t know. Reminds me of a different kind of “nugget” (no, not this one or this one).

And……. not okay that I’m still up right now. Time to hit the sack. No more vegging on the couch.

    Is PB Coco cream just PB2 mixed with coconut butter? Looks delicious, can’t wait to try this! I have the more fattening version in the freezer now.

    Wow does that look amazing, and so easy! And I love how you make bigger portions of meals/desserts with less calories, I’m such a volume eater too :)

    Where can I find coconut butter? Whole Foods?

      ha! It wasn’t really that pretty. But… it did last really well in the freezer for 2 days. :) I thought it would be brick hard, but it was still a good consistency. :) And… I’ve had MANY a diet soda explode all over the kitchen.

    I’ve been admiring your recipes from afar for a weeks now but after stumbling upon this one, I need to tell you how brilliant you are! Unfortunately i don’t have any coconut butter. Do you think it would work with another TBSP of nut butter?!

      Jenny- I don’t know. It should work. Coconut butter has a different consistency and make it a bit creamier and sweeter. Try it and let me know. Now I’m curious. Or I’ll try it and let you know. ha ha! I can always use a reason to make this. :)
