Actually, I think everyday should be a tribute to peanut butter (or any nut butter for that matter), but in honor of the special Labor Day sale on PB2 (that’s still going on) I thought I’d share a recipe I’ve been making almost daily over here.
If you don’t know about PB2, it’s a powdered peanut butter that you mix with water ( or milk, soymilk, almond milk, etc.) to make a paste similar to peanut butter. You can also mix it with cottage cheese, yogurt, cream cheese, etc.) I eat this stuff almost daily. Right now Bell Plantation is running a special deal.
I’m about to order some myself and even though you have to order two 12-packs to get the free shipping, if you go through this stuff as fast as I do it’s worth it.
So….. here’s the recipe that was inspired by Chocolate Fudge Pie.
Healthy Peanut Butter Fudge Pie
1/2 very ripe banana
1 tablespoon coconut butter
1 tablespoon peanut butter
2 tablespoons applesauce
2 tablespoons PB2
Ingredients
That Artisana Coconut Butter is a new staple around the STUFT house (thanks to Chocolate Covered Katie and all her fabulous recipes). I omitted the peanut butter in the picture because you can use any brand or type that you want. You can even substitute in a different nut butter. For this particular recipe I used Naturally More.
Directions:
Combine all ingredients and blend together until smooth. I used the Magic Bullet, but I’ve also mixed by hand a few times.
Pour into small dish.
Cover and freeze for a couple hours.
Then………
you will have this.
Eat it plain. or top it with some STUFT Dark Chocolate Sauce.
Or even top it with a little Fat Free Reddiwhip or soy whip.
Don’t mind the smudges on the plate. Obviously photography and editing is not my expertise. I don’t have time to edit my photos (or get my house organized).
This can even be used as a pudding or frosting if you chill it in the refrigerator instead of freezing it.
Or even as a thick mouse pie.

Is PB powder the same thing as PB flour?
Do you actually mix the pb2 with powder to make peanut butter or just use the pb2 powder for this recipe?
Just add PB2 powder. 🙂
Mmm. Would love to try, but I am allergic to banana, so I am trying to think of a banana replacement.
