A Surprise Party Crasher


Last night on my way home from the gym I noticed a little someone who had snuck in my notebook.


What the? This tatted up Flat Kitty surprised me by showing up an a different day besides Friday. He reminded me that we had gone to Trader Joe’s last week in search of broccoli slaw (more than once) with no success.


Hmm… looks like being photogenic wasn’t a success either. I should really stop taking pictures of myself in the car.

Even with his tough guy image, we couldn’t convince any of the employees to explain to us what happened or tell us when it was coming back.


Monday nights are my party nights- The Bachelor Pad Party (soon to be the Dancing With the Stars Party next week). My staple party food is broccoli slaw spaghetti and cheese sandwiches.

Last night I didn’t have any broccoli slaw. Sad smile Flat Kitty, always one to look at the glass half full, reminded me I had a $4 spaghetti squash in the fridge.

So we made

Spaghetti Squash Marinara


1 spaghetti squash cooked and scraped out with a fork

1/2- 1 cup marinara sauce

garlic salt, garlic powder, crushed red pepper, Italian seasoning, dried oregano

optional vegetables: tomato, mushrooms, olives, spinach, fresh basil, etc.



Cut the spaghetti squash in half and scoop out the seeds with a spoon. Poke holes in the skin with a knife or fork.

Bake the squash. (Baking directions below.)

Use a fork to scrap the cooked squash out in strings.

Spray a pan on the stove with nonstick spray. Add squash strings and seasoning. Cook for a few minutes until browned a little.

Add marinara sauce and heat for an additional couple of minutes.

The best part about this is that you get a ginormous bowl of “spaghetti” for about 250-300 calories (depending on the sauce or extra vegetables you use).


Here’s what I did:

I bake it two different ways. I either bake it in the oven at 375 for about 50 minutes face down on a baking pan sprayed with nonstick spray, or if I’m in a hurry, I steam it in the microwave for about 10 minutes.

Last night I was in a hurry (after teaching 4 classes in a row) and anxious to get the party started. Smile


So we steamed it.


Then made our “noodles”.


Flat Kitty helped me cook it a little one the stove with all the seasonings.



Then I added the sauce and topped it with fresh basil. I had a cheese sandwich with Trader Joe’s Whole Wheat Pane bread on the side.

It was so weird having a “friend” to party with. Ha ha ha!

And well, because it was a special occasion and all (being the finale episode) I got bullied into having a yummy dessert.



That’s some Peanut Butter Fudge (made with PB2) frozen for about an hour so it was like a thick pudding and topped with a Deep Chocolate Vitamuffin. Mmmmm…..


I did NOT share. I tried to distract him by giving him a challenge to figure out what was different about Melissa’s face last night.


He was stumped. All in all it was a fun party though. Smile

    I have never had spaghetti squash- but considering I am getting married in less than two months and need to lessen my pasta consumption that looks like a great alternative! 🙂 i am always so jealous of your monday night “parties” 🙂 Yum-O

      Stephanie- I have to admit I look forward to my Monday night parties. He he! Spaghetti squash is AWESOME! You will love it! I love that I can have a giant bowl of it for not that many calories. When’s your wedding????? 🙂

    That is so crazy that you have this recipe up today! My sister dropped off a bunch of spaghetti squash last night that a friend gave her and she didn’t know what to do with it. I wasn’t exactly sure either then you post a recipe on it today! Awesome!! Can’t wait to try it tonight. Thx!

      Spaghetti squash is the bomb. 🙂 I’m so jealous that you have a bunch of them because they can get pricey sometimes. I have a bunch of recipes with spaghetti squash- lasagna, Mexican casseroles, etc. I better get going on them so you have some stuff to do. ha! 🙂

    I am obsessed with spaghetti squash. You can put basically anything on it! I mixed with with coconut oil, garam masala, and raisins once and it was delish.

    I want your dessert!

      Laura- I know isn’t spaghetti squash just amazing? I’m going to have to try the masala mixed with it. I also want to try it with a peanut type sauce. Hmm…..

    I just made spaghetti squash for the first time last week and I’m in LOVE!! I have a post about it for next week =) I can’t believe it took this long for me to try it!!
