Spinach and chocolate? What the?
I couldn’t get to this last night, so I hope it’s worth the wait. ![]()
I’ve been making a few different versions of these amazing things that I wrote about in my Weekend Update.
These are chocolaty, moist, protein filled, Popeye approved, little huge muffins that will satisfy the toddlers, the mamas and everyone else in between.
Mighty Chocolate Microwave Muffin
1/2 cup egg substitute
2 tablespoons nondairy milk
handful fresh spinach
2 tablespoons sweetener of choice (for sugar free version use 2 sweetener packets)
1/4 teaspoon vanilla or almond extract
1/2 cup pumpkin
1/4 cup whole wheat flour (or 2 tablespoons of coconut flour)
2- 4 tablespoons oats
1 tablespoon ground flax (optional)
1/2 teaspoon baking powder
2 tablespoons cocoa powder
Directions:
Blend egg substitute, milk, spinach, vanilla and sweetener until smooth.
Add all other ingredients and stir well until combined.
Pour in microwave safe mug sprayed with cooking spray.
Microwave for approximately 5 minutes.
Plop Place on plate and top with nut butter of choice or some Creamalicious Frosting.
All I can say is YUM!
Notes- These can be made without the spinach of course, although I promise you can’t taste it (and it’s just so much more fun).
The versions I’ve made I used 2 tablespoons of agave (for the boys) or 2 Splenda packets (for myself).
I have also subbed in a whole banana for the 1/2 cup of pumpkin and then omitted some of the sweetener. I even liked the taste a little better and it seemed heartier, but it was about 90 more calories.
If you’re going for low carb, use 2 tablespoons of coconut flour instead of 1/4 cup whole wheat flour.
If you’re really trying to cut calories you can omit all other flour/oats/flax and ONLY use 2 tablespoons of coconut flour. (That’s Deb’s famous Protein Fudge Muffin original recipe.)
I always make mine using Hershey’s Special Dark Cocoa Powder (it’s my FAVORITE).
Here’s a little look at the process.
Ingredients
(Above version was what I made for the boys.)
(This was for the version I made for myself. There are no oats or sweetener in the picture although I usually use 2 tablespoons of oats for texture and 2 Splenda packets.)

Boy’s version.
Mama’s dark chocolate version.
Microwave for approximately 5 minutes. (Our microwave is NOT the most powerful so I microwave mine for 5:55. Weird, yes, I know.)
Plop Place on plate.

Cut in half (so it looks a little more appetizing).
Top with nut butter or “frosting” of choice.
Some favorites:
PB2 mixed with chia seeds and soy milk.
Organic Nuttzo and Creamalicious Frosting.
A mix of PB2 powder (with sugar free maple syrup and a little soymilk) AND Nuttzo (I’m a little obsessed with this stuff right now).
I want to try it next with some STUFT Dark Chocolate Sauce. I bet that would be GO-OD!

Today’s muffins went perfectly well with some protein strawberry smoothies.
In the smoothie- frozen strawberries, Kirkland nonfat Greek yogurt, vanilla protein powder and vanilla soymilk.
Mine was a little prettier. (Sorry boys- mama had to take a nice picture.)
The PERFECT post workout meal after Strollerwise and a 5 mile run with the stroller.
I had to do something to make myself feel better since I stepped in dog poo at the end of my run.
Now I get to go clean it off my shoes. Lucky me! ![]()

It is GOOD! Coconut flour was on sale on Amazon a couple of days ago (for your gluten free goodies).
