Sorry

 

It’s totally one of my pet peeves when people say they’re going to do something and then they don’t. Today, that’s me. I took pictures all yesterday morning of that fabulous microwave chocolate muffin, but the day got away from me and by the time I got home and got the boys to bed I could barely keep my eyes open. Although, like I wrote on my Facebook page, I manage to eat some roasted cauliflower with my eyes propped open (and the Dancing With the Stars Premiere may have been one in the background). Smile

Here’s a little look at the day yesterday.

Chocolate spinach microwave muffins galore for breakfast (I’m still trying to figure out a good name and these muffins deserve a post all on their own).

Then I tried to pawn off those Trader Joe’s Skinny Fries from our power outage night to the boys for their snacks for YMCA Strollerjam. Ha ha!

They didn’t seem to mind them.

After we got home from class we had some yummy sandwiches for lunch.

Grilled cheese with light jarlsberg, soy veggie crumbles and Costco jalapeño yogurt dip.

I made mine a wrap. Soy veggie crumbles, light jarlsberg, jalapeño yogurt dip, romaine and a jalapeño in a Flatout with some carrots on the side.

I got lucky and the boys were entertained with their new toys of choice for awhile.

Who knew some flashlights would give my enough time to clean up the kitchen?

I got a special Amazon delivery.

Bob’s Red Mill Coconut Flour and Bethany Frankel’s book Naturally Thin might just be the perfect order.

I can’t wait to read that book. I just don’t know how I’m going to find the time.

Then I was off to the Y to teach 4 classes in a row. Ugh.

Got home just in time for baths and to get the boys to bed. Then showered and had some dinner.

I followed up my dinner with this concoction.

This is from STUFT reader Tracey who gave me the idea to mix Kirkland Nonfat Greek Yogurt with a sugar free hot cocoa packet. (Thank you Tracey.)Smile

Straw-Cocoa Fro Yogurt

1 cup nonfat Greek yogurt

1 packet hot cocoa mix (I used 25 calorie sugar free mix)

1 cup frozen strawberries

a little nondairy milk (as needed)

Blend it together and add a little nondairy milk (or low fat milk- I used vanilla soy) to help blend.

You get this fabulous BIG bowl of protein filled frozen yogurt for about 200 calories (if you use a sugar free hot cocoa pack).

I was deliriously tired, but still managed to sneak into the workout room with my Magic Bullet to make this. Ha ha!

I got up early this morning to get a few things done. I used the first 10 minutes to pick at my face (why does that happen?) and now I have just enough time to tidy this mess up before Lidia gets here.

    Boo to you! I want that muffin! 🙁

    Coconut flour is the best! I love the silky texture it gives baked goods, but you really have to be careful with it – can’t sub it 1:1 for regular flour.
