So Saturday I was a presenter at Fitness Palooza.
Fitness Palooza is annual conference hosted by the YMCA for fitness instructors and personal trainers. It is am amazing event.
Well, the conference started at 11:00am. I didn’t present my session until 3:15pm. I won’t go into details about my crazy morning, but I didn’t get there until 1:15pm. No surprise I know, but gosh darn it, I come to find out that I got an award at the opening. And from the CEO!!!!!!!! The story of my life that the ONE time I get an award I’m not there to hear what they say about me and shake the CEO’s hand. Yikes.
I wish I would’ve been there (way to make a great impression Kristin). Oh well. I did manage to ask a really nice lady in my session to take my picture with my award.
Once I was home I sweet talked Andrew into entertaining the boys so I could take a few more pictures to savor the moment.
Group Exercise Instructor of the Year? I didn’t even know I was nominated. He he!
Along with my plaque, I got a really cool backpack.
And some other goodies (gotta love the free goodies at conferences).
Andrew and I celebrated last night with that Trader Joe’s wine and some pizza.
It looked a little like this.
Wine, salad and a dinosaur looking arm/wrist.
A little Modern Family.
A lot of veggie pizza.
Maybe a little Jersey Shore.
And some Kitty love.
Ha ha!
The celebration continued this morning on the treadmill. My run got interrupted by two certain boys that woke up a little early, so we had to take things outside to finish the run with the stroller.
We followed up the run with some green pancakes for breakfast.
Yum, right?
I pretty much just followed the directions on the mix, but blended in some spinach.
Here’s a look at what I did.
The Coach’s Oats multigrain pancake mix I found at Costco. It is FABULOUS! I also really like Trader Joe’s Multigrain pancake mix (for muffins, etc.), although I’ve never actually made pancakes with it.
I started with a handful of spinach. Added the egg substitute and 3/4 of the amount of water the recipe called for and blended it all together.
Then I added that to the dry mix.
It made these little beauties.
A LOT of them!
(Note- You may need to play with the water to dry mix ratio. Cut back on the water or add more dry mix.)
I tried to impress the boys by topping some with agave and banana slices.
They LOVED the gourmet green pancakes.
I LOVED my overnight oats in a Nuttzo jar (with an iced mocha).
I’m really sad to see that Nuttzo jar go, but overnight oats were the only way to say a proper goodbye. I’ll be buying you again Nuttzo (once I finish my next three or so jars of nut butter).
That picture is reminding me it’s also time to put away those summer pint glasses and replaced them with some fall ones (along with all my plug-ins, lotions and soaps for my “season scent issues”).
Naturally, after breakfast I froze the leftovers.
While the boys helped themselves to my goodie bags from Fitness Palooza.
We had a very eventful rest of the day as well, but to avoid boring you (and to get some sleep), I’ll save it for tomorrow.
