FKF Presents BBQ Spaghetti Squash Bake and a Special Event


Happy Friday! First let’s talk about the Special Event.

Tomorrow’s a big day. We’re having a Fundraiser at the park for a dear friend’s daughter Amelia. If you’re in the area make sure to stop by. Batman is making an appearance and so our my Peanut Butter Doughtzel Balls (which I have yet to start).


If you’re not local or can’t make the event tomorrow, the boys and I are “running for Amelia” in the Silver Strand Half Marathon on November 13th. We’ll be taking sponsors/donations and giving all the money to Amelia’s Hope for Hearing. I finally got the details worked out this week, so a separate post on our run and how you can help will be coming soon. I hope we can help this amazing little girl get the surgery she needs to be able to hear.

And now on to you know who……

Flat Kitty.

I’m a little sad to say that my certain tatted up Flat Kitty was missing the majority of the week.

Luckily I still had my sweat-banded, muddy, beat up friend to hang out with. (He really likes the new fall TV show line-up.) Smile


He had a great idea how to use those spaghetti squashes from Trader Joe’s last week.


BBQ Chicken Spaghetti Squash Bake



1 spaghetti squash

rotisserie chicken breast, cut into bite size chunks

red onion

barbeque sauce

jalapeño (optional)

spices: garlic powder, garlic salt, sea salt, pepper, crushed red pepper


Here’s what I (oops, sorry, WE) did.

We steamed the spaghetti squash in the microwave like I did here.

Then we used a fork to get the spaghetti strands in a pie plate coated with nonstick cooking spray.


Added a little more cooking spray and all the seasoning and spices on the top.


Then added the chicken breast mixed with barbeque sauce, red onion and sliced jalapeño.


Ugh. Fine, you can be in the picture.


We baked it at 375 CONVECTION (or 400 regular) for about 15 minutes.


It was the perfect huge, healthy, nondairy, high protein meal (for not too many calories- 3 cups of spaghetti squash is about 100 calories).

WE loved it!


I always have to try something new more than once so last night I had to try it again. While I was in the kitchen I found a little someone hiding under my coupons. I’m not sure how he got there, but he was MAD that he’d been stuck in the drawer and he was ready to play hardball.


He saw I was cooking up the same concoction and he wanted to see if I was ready for the HEAT.

First, tatted up Flat Kitty made sure I used my favorite BBQ sauce ever- TATS Black Dahlia Original Ghost BBQ Sauce.

(I use this same sauce for my BBQ chicken pizza.) 

Well, he wanted to see if I would step it up another notch with both a jalapeño AND a habanero.


Silly Kitty.


Obviously I’m NEVER one to back down from a challenge. I took this guy on.


This Spiced Up BBQ Spaghetti Squash Bake was the bomb.

Straight from the oven.


Approved by Flat Kitty.


Drizzled with a little low fat ranch dressing to calm down the spice.



And into my mouth.


He was impressed.


And so was his real life friend.


I don’t know why he tries to mess with me.
