The weekend may be over, but October is just beginning. I need to take some time to wrap my head around what my goals are for this month. I will NOT let another month go by with my messy office or the scary green room looking the way that they do. Ugh.
Looking back on the weekend there are so many amazing things that happened that are so much more important than my little overreaction. I feel so silly that I dwelled on that for a day.
To start the week I thought I’d share a few things that I’m truly thankful for this past weekend.
First of all- for you. Thanks for reading this blog and for your nice, supportive comments. Who knows where this will be months from now, but the fact that you take time to read this means the world to me. So, thank you. ![]()
Now let’s get to some eats shall we.
I’m thankful for…..
a quick at home Mexican dinner we made the other night that started out with one of these.
Have you tried Bud Light Lime yet? They’re pretty tasty and I usually don’t like beer. (I’m more of a Mike’s Light kind of gal.)
We were super hungry and wanted good food as quickly as possible so I made some quick chicken wraps.
I took some Costco Rotisserie chicken breast, fat free refried beans and jalapeño yogurt dip and wrapped it all up in a Flatout wrap and some corn tortillas. Topped it with some red taco sauce and baked it for a little bit in the oven to get the edges crispy.
Then added some chopped romaine, a jalapeño and lots of salsa.
It was delicious and took about 5 minutes to put together. I also added a little scoop of Andrew’s simplified version of date night guacamole (but was too lazy to take a picture).
I’m also thankful for this Rheingau pinot noir wine from Trader Joe’s
that went perfectly well with this last minute stir-fry tonight.
In the “fry”- kale, broccoli slaw, zucchini, chicken breast meat, a jalapeño, and one of these wonton shrimp noodle bowls from Costco.
I spiced it all up of course with a bunch things- soy sauce, chili garlic paste, garlic, crushed red pepper, rooster sauce, etc.
I also ate one of these delicious treats a couple nights this weekend.
These S’mores Gelato sandwiches from Costco are to die for. Mmm……
And now on to the important stuff:
I’m always thankful for Joaquin’s ability to provide some dinnertime entertainment.
Okay, so maybe it wasn’t that entertaining. Oops.
I’m really thankful for these little gems.
Oh yes. I bought these Spanx shorts at Costco the other night and they are no joke. I rocked them all day today and now I’m saving up to buy myself a tank top. They may just be the coolest thing ever.
Now on to the seriously IMPORTANT stuff.
Two things first-
My best friend’s father-in-law underwent a lung transplant earlier today and everything is going well. Yay!

And last night I got a phone call from my cousin to tell me that he’s getting married. Woot woot!

And finally, I’m thankful for this heart-warming event…..
Saturday was Amelia’s Hope for Hearing fundraiser.
Here’s amazing Amelia.
And here’s her amazing family.
The fundraiser was a huge success. It had it all- a raffle, a silent auction,
great cooks
good food
(There were other yummy goodies there, but I didn’t get a picture. I was busy keeping trying to keep track of this guy.)
He he. Grandma tagged along for the fun workout. He’s a mover!
Luckily someone else had an eye on his brother.
There was also a bounce house for the kids
some very special visitors (the famous Batman and Catwoman)
who provided some great photo opportunities
and taught Judah some tricks.
All in all,
the fundraiser was all about good times, good people,
family and friends,
and an AMAZING cause.
The generosity of others is something to truly be thankful for.

I ran my first 5K Septemeber 24 and when it got tough (LOTS of hills), I remembered a post from a while back about being thankful to even have the ability to run.
