I never have, but the other night Andrew got a phone call at 1:30 in the morning to go into work.
Want to know why? A secretary bird was out of its enclosure and he was the lucky one who had to go catch it.
Ha ha. I thought it was pretty funny, but maybe only because I got to go back to sleep.

Well, I’m pretty sure my recent Spanx purchase has done just that. I love being able to hide my crazy pointer belly button. If I could only live in my new Spanx shorts all the time…….

I woke up super excited about the chilly, wet morning and right after I put on my first long sleeved shirt of the season, I drank one of these.

Ha ha! This was the situation I walked into this morning. Speaking of being stuck though, man I am in a huge rut with my messy office. I don’t know where to start. I could be buried in there or the scary green room for HOURS! I used to be so organized. What happened to my life? Yikes.

Have you ever just wanted to sit and eat a huge bowl of peanut butter cookie dough dip?
Well, the boys and I did yesterday for lunch after our Strollerjam class. They had never had it before so I decided it was time to introduce them to this deliciousness. Chocolate Covered Katie had a new sugar free version of her cookie dough dip posted last week so it inspired me to revisit my PB2 version. I doubled the recipe and decreased the sugar and it was still fabulous (for fewer calories).
I served it up with some homemade cinnamon crisps.
For the boys.
They weren’t sure about it at first.
But then they figured out just how AMAZING it was!
I already knew.
Here’s an easy, printable version of the modified recipe. Really, you have GOT to try this!
|Healthy Peanut Butter Cookie Dough Dip||
- 1 can garbanzo beans, drained and rinsed (250 grams)
- 1/8 teaspoon salt
- 1/8 teaspoon baking powder
- 2 teaspoons vanilla extract
- 4 tablespoons PB2 (or other nut butter)
- 2 tablespoons brown sugar
- 1/4 cup granulated sugar (or Splenda granulated)
- 1 tablespoon ground flax
- 1/4 cup nondairy milk (almond, soy, etc.)
- Put all ingredients together in food processor.
- Blend until smooth.
- Cover and chill if not serving immediately.
If you use regular nut butter in place of the PB2 make sure to decrease the amount of nondairy milk. Start with 1-2 tablespoons and add additional tablespoons as needed until you get the desired consistency.
Add in chocolate chips, butterscotch chips, white chocolate chips, or shaved chocolate for an extra special treat.
Can be served with graham crackers, animal crackers, homemade cinnamon crisps, pretzels, or whatever your heart desires!
And lastly, have you ever eaten a big bowl of healthy cookie dough dip with garbanzo beans before working out (or teaching 3 hours of aerobics classes)?
