Warning-This Fall Inspired Muffin Will Make You Want to Dance!


I’m trying not to worry about all the files that need to be organized.


Or all the laundry that needs to be done.


Or the fact that right after this picture was taken I had a serious situation on my hands.

Instead, I’m focusing on all the positive things about fall and what I AM managing to get done.

My day today started with a delicious little Flatout wrap.


In the wrap- Jalapeño yogurt dip, egg substitute and spinach.

I can’t get enough of that darn dip. It’s good with just about everything.


Then while I was home alone I ate a version of one of these little beauties for lunch. It reminded me that I hadn’t posted the recipe yet.


As with all other new creations, we’ve been eating our fair share of these things over here.

They are low in calories (about 275-300), high in fiber and big (of course).






Um, yeah. Pretty much my favorite thing right now.

I’ve topped it with PB2.


I’ve made a couple green versions. (I just added a handful of spinach and blended it with the egg substitute.)



I’ve topped it with healthy Creamalicious frosting.


I’ve made a microwave version of it (very similar to the high protein microwave muffin).


Today for lunch I even subbed in canned pumpkin for the applesauce (but still served it with the “frosting” of course).


It went perfectly with my first favorite morning mocha of the season.


These guys think you’ve got to try one of these muffins as soon as possible!

Fall Muffin Dance


(Do you like Judah’s moves? Andrew informed me that I dance like that. I’m embarrassed to admit that I think he’s right. I’ll spare you the visual.)

Kitty opted out of the dancing for a little something he thought was more important.


Guess what happens to cats that eat frosting.


Ha ha ha! Thanks Mom for giving your first grandson a bath. Kitty loves you!

I’m off now to see how much dancing cleaning I do before I’m off to teach classes tonight. Have a good one!
