The other day Dr. Oz did a little taste test of PB2 on his show.
He liked it (or course).
We do too, especially during “nack” time.
I don’t know about you, but there’s a certain time in the late afternoon that the same things usually happen around here.
I realize I’m tired.
I realize I’m hungry.
The boys wake up from their nap.
The boys start repeating “ow-t”, “ow-t”, “ow-t” while attempting to get out of their cribs.
I remember that there’s wet clothes sitting in the washer and dirty dishes from lunch in the sink.
I tell myself that tomorrow I’ll make a better effort to wear cute workout clothes instead of my “normal outfit” – an old sports bra, tank top and whatever running shorts or pants happen to be clean (or not sitting wet in the washer) .
I notice all the food (crumbs, yogurt, etc.) stuck to my “normal outfit” from earlier in the day.
I realize I only got about 3 things done on my “to do” list (which is about 3 pages long) for the day.
I crave a Coke Zero like no other. (I really wish I didn’t.)
I have to admit there have been days in the past that I snack like crazy to just get through the rest of the day.
Now though, instead of indulging in one too many Costco Animal Crackers, I make myself one of these.
There are all different versions of this cookie, but because we’ve got apples coming out of our ears over here (and, well, because Dr. Oz likes PB2 and all) we’ve been “nacking” on these little ginormous things lately.
“Nack” Apple Cinnamon Oatmeal Cookie
serves one tired, hungry mama or two energetic troublemakers toddlers
Ingredients:
1/3 cup oats (30 grams)
1 tablespoon whole wheat flour
2 tablespoons PB2
3 tablespoons applesauce
1 tablespoon nondairy milk
1/4 teaspoon baking powder
1/4 teaspoon vanilla or almond extract
1-2 sweetener packets (I use one Splenda)
cinnamon to taste
small fresh apple chunks (optional)
Directions:
Mix all ingredients together in small bowl.
Form into one large cookie on cookie sheet. (I use parchment paper.)
Bake at 350 for 10 minutes.
Yep. This “nack” hits the spot.
It’s about 260 calories or so for the entire cookie. Now THAT is awesome!

Great, one more thing to add to my “to do” list.
Today was a LONG one.
I not only needed my Coke Zero, but I needed to doctor up the cookie of the afternoon.
I also needed to do something with this.
Problem solved.

In the jar- a little SunButter, Kirkland Nonfat Greek yogurt, tablespoon of sugar free strawberry jelly and this ginormous cookie.
It was so fabulous that I almost forgot that I was craving a Coke Zero.
A little bit later I remembered about the Coke Zero, but managed to forgot my wallet, water and money when I went to teach my classes at the Y tonight. Lovely.

I really need to bake more with PB2! I go through it at an alarming fast rate already though so maybe I shouldn’t start??

Hey, you’ve still got 2.3ish months to go!! That’s plenty of time – haha!!! And if not, you can always recycle your resolutions for 2012
I might as well just rewrite the whole darn list of resolutions. ha ha!
the cookie looks awesome…it reminds me of a cross between two things i make…one is raw vegan apple crumble and the other is a microwave banana oat cake. your cookie/cakie looks awesome!

I have been wanting to try PB2 but have never found it in any grocery store. The large cookie looks great, I love when you can get lots of bang for your buck so to say. Also I just did a major hair change as well and have yet to take a pic because I have yet to really look presentable.
Yes- lots of “bang for your buck” is what I’m all about. I’m something you call a volume eater. ha ha ha! Can’t wait to see your hair! Mine is just a root touch up. Nothing exciting.

He he! Thanks! I had to find something I could share. Sometimes I’m a little selfish and not in the “sharing” mood. These cokies are big enough (and easy enough) that I don’t mind.

Speaking of calendars, my husband let our son loose on ours with a marker. Now, even if I wanted to write daily reminders on it I can’t as it is covered in blue scribbles. He says it’s alright because we will move on to a new month soon anyways. Where is the logic in that?!
I like that logic.
Only a week to go. Oh… if I could only have everythign on one calendar…. my life would be a lot easier.
