Lulu-Loving and Green Goblin Muffins

 

Happy Sunday! I hope you’re having a great weekend!

My computer was off ALL day yesterday and it was glorious! Smile I’m hoping it’ll be off all day today too because I have a mean “cleaning cardio” workout staring me down. Ha ha!

Just wanted to share a couple things to start the day.

The other night I had a first experience with a little something.

I stepped foot in a very special store.

My best friend had been telling me I needed to go for awhile.

I’d been admiring everyone in my classes wearing these cute clothes.

I was always too scared (for fear of wanting to buy everything), but since I have a certain “date” coming up, I thought I’d step outside my comfort zone and check it out.

Coincidentally Andrew had my wallet in the diaper bag this particular night, but thanks to a little cash I scrounged up and my STUFT Fitness business card, I managed to get the most amazing outfit ever.

The ladies in Lululemon Athletica were soooooooo nice. They totally helped me find the perfect size and fit. I‘ll be the first to admit that I am very annoying customer. I ask a lot of questions and try on way too many options before making a decision, but they weren’t phased (or did a really great job of pretending they weren’t annoyed). Ha! These ladies were so patient with me and my indecisiveness (and my nice post-workout hair).

The whole experience was just plain AWESOME! I am in LOVE! (I was warned this would happen.)

I chatted them up enough and told them about all about my job at a fitness instructor/business owner and about my big events coming up (date with “my boyfriend”, Running for Amelia, etc.) that my new best friends gave me a special Lululemon Athletica tank top for product placement.

Holy moly. I am soooooooo excited! Not only to have a new daily “uniform”, but to be able to represent this amazing brand.

Love that they give you these inserts that can be put into any of their tanks.

Ha ha ha! I actually turned around and went back for these because I forgot them.

A great big THANK YOU to Lululemon in Carlsbad and Susannah for helping me out! As soon as I make a little cash I’ll be back for another “uniform”.


One more thing before I go. While I was writing Friday’s Flat Kitty post I realized I never gave you the recipe for those green muffins the boys were chomping on.

Really, these muffins are so great. Andrew even ate one. I ended up experimenting and subbing in coconut oil because that’s all I had around and the result was pretty darn amazing! They are a family hit!

Green Goblin Muffins

Makes 20-24 muffins.

 

1- 2 cups fresh spinach

2/3 cup egg substitute

1 cup sugar (or granulated sugar substitute)

1/2 cup unsweetened applesauce (I use a snack size individual package)

2 tablespoons coconut oil (I used extra virgin)

1 teaspoon vanilla

1/2 cup nonfat Greek yogurt

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt 

2 cups of whole wheat flour

4 bananas (mashed)

 

Directions:

Blend together spinach and egg substitute (I use the Magic Bullet).

Transfer into large bowl or KitchenAid Stand Mixer and add all other ingredients.

Mix until all ingredients are combined.

Pour in greased muffin pans.

Bake at 350 for 20-25 minutes.

I am telling you- these are amazing!

The color may be a little weird, but they are goblin (gobbling) good!!!! SmileHa ha!

    I’ve never been to lululemon either! And been wanting to go for awhile but fear it will cost me too large of a portion of my paycheck :D And too funny but I have a total obsession with those “inserts” that I happen to call chicken cutlets! Sorry that was a bit ridiculous and probably inappropriate – lol!!

      Oh Kinley- once you go thinkgs will be crazy! I wanted everything. Expeniseve stuff, but soooooo cute. I’m wearing my new pants right now and loving them! And.. yes, unless I want to look like a 14 year old boy, inserts (your name is better) are a MUST!!!! ha ha!

    I have been to Lululemon once and their clothes were awesome. So well made and cu-ute. I didn’t get anything, but if I taught like you for a living I certainly would use that as an excuse.

      Yes, so “cu-ute”. :) Like how you wrote that. I will use my job as an excuse for as long as I can. Other “work” outfits can be expensive too, right? :) I’m going to have to keep up on laundry now though so I can keep wearing the same outfit. ha!

    I have more Lulu clothing than I should probably admit! I shop online though and have only been into a store twice. I love their running line and really love how the clothes fit. i swear it is what got me through my half-marathon training this summer!

      Do you? What’s your favorite? I want some shorts, but only got some pants this time.

      • I love the Run Swiftly Long Sleeve (I have it in grey and pink) for running, the pure focus tank for everyday wearing (I even wear it to work – I work in an office), and my favourite pants are definitely the Still Pant. I also bought the Audrey jacket this year, it was my first Fall/Winter jacket purchase in a couple of years and I would have spent just as much on another brand :)

        Yeah, obsessed :)

    Did Shannon tell you that we were just talking about Lulu?!?! She sold me also! So what pants did you end up getting? I can’t decide what capris to get- trying to find time to make it down to Fashion Island (without kids, please!) Love your blog- keep up the good work, hot stuff :)

      Yes, the only reason I went to that store was Shan. She warned me. Maybe I should warn her that Andrew may not like her advice. ha! Beth- thanks for reading! I got the basic running capris and the gather and crow crop. LOVE them!!! Yes, you must go to that store without kids. :)

      Hi Bailey! I haven’t tried that, but it’s worth a shot. :) If you try it let me know. I know sometiems when I sub in coconut flour they don’t rise as well.
