Getting by with a Latte- Dark Chocolate PB2 Latte

 

This morning was a doozy. I had high hopes of waking up early and getting a million things done before the boys woke up. I managed to write a less than mediocre post and that was about it. That left me about 5 minutes to get myself and the boys ready and out the door to Strollerjam (just in case you’re wondering- that is NOT possible).

I got us all changed in clean clothes (me in my new uniform) and out the door.

The boys got their milk, but mama had no time for coffee (or to do her hair). Ugh.

I scarfed down a Chocolate Peanut Butter Supreme Protein bar in about 1 minute on the way to class.

Hmmm….. looks like I didn’t have time to get my “inserts” in my new workout top either.

We got to class just in time to get everything out of the car and complete the warm-up loop.

Then it started raining.

Happy Monday to us!

So we packed everything back up and headed home. (It’s about a 35 minute drive.)

Home wasn’t much better.

I was grumpy and in need of caffeine.

The boys were disappointed in their on-the-go breakfast (milk, a banana and some graham crackers- please don’t judge).

I tried to salvage the situation with some whole grain waffles topped with my attempt at Mama Pea’s Sunflower Seed Butter.

That worked for about 5 minutes. It probably would’ve lasted longer if my butter turned out as good as hers, but these guys were not impressed. I don’t have the special skill yet.

They were over it.

I needed my daily latte like no other. I mean I NEEDED it. You’ve been there before, yes?

I figured once I had my latte I wouldn’t be annoyed by the constant standing on chairs, throwing of refrigerator magnets, the dreaded “popcorn” toys and Kitty’s airballs. (You don’t even want to know.)

The pressure was on.

Somehow, I happen to create the perfect solution.

A little caffeine.

A little dark chocolate.

A little PB2.

Perfection.

Dark Chocolate PB2 Latte

brewed espresso

1-1 1/2 cups nondairy milk

sweetener of choice

2 tablespoons my favorite cocoa powder

2 tablespoons PB2

 

Notes- I like to use a combination of Vanilla Soy Slender and unsweetened almond milk.

I usually use 2 Splenda packets for the sweetener.

Directions:

Brew espresso following directions. (I brew mine with the stovetop espresso maker.)

Microwave the milk and sweetener for about 3 minutes.

While milk is heating, put cocoa powder and PB2 in large mug.

Add espresso.

Stir until smooth.

Froth hot milk and sweetener. (I use my handheld milk frother.)

Add milk to chocolate PB espresso mixture.

Oh yes.

This drink is THAT good.

And even better topped with a little Trader Joe’s Chocolate, Sugar and coffee bean grinder.

Thanks to that latte we tackled the rest of the day without any issues. The boys were off to Tutu’s while I was off the the Y for 3 hours of teaching aerobics. Smile

I have a feeling this drink is going to be a regular part of the morning routine. Next time I’ll have it a little earlier.

    The Dark Chocolate PB2 Latte looks amazing. Wow…you could be your own barista and run your own coffee shop with those!

    And this is random but you have the whitest and prettiest, straightest teeth ever!

    so true…thismorning it was drizzly and dreary. jsut wish i had the time to be at home and make that wonderful latte. so yummy! i was at work and had to settle for a mediocre coffee……will have to try yours this weekend!

      Mediocre coffee is for the birds. ha! Actually, I may take a quiet mediocre coffee over a really good latte with screaming toddlers pulling down my pants. :)

    I make hot chocolate using the same almond milk and cocoa, but I really need to get a frother, I’ve gone through 2 and love them. About working out without the kids all over me, it’s AWESOME!!! When my kids were younger I too would have to go running with them in the baby jogger or wait until it was nap time. Now they can actually just play and entertain themselves. Trust me I don’t take it for granted.

      Marie- yes you NEED that frother. You’ve already gone through 2? I’ve gone through 2 more expensive ones. I like the cheapy because then I don’t feel as bad if something happens to it. :) I can’t imagine a time when they can entertain themselves for more than 15 minutes. ha!

    Ahhh coffee makes all the difference. I have been without it for 3 days (gah!) in hopes that my little one starts napping better (I’m nursing) – still not luck. I think I might need to add it back into my life. And don’t you LOVE your frother? I LOVE mine.

      Oh man…. hopefully you’re little one starts napping better. Oh how I remember those days. Nap time time right now is PRECIOUS!!!!! And yes, the frother is one of my FAVORITE appliances. Love that it’s $20 too! :) I hope when you read this it’s while your little one is asleep. :)

    I had one of those days today – no fun! But I put on more than a 15-minute show during those times!

    And please tell me you licked the spoon used to stir together the PB2/Cocoa/espresso mixture at least once – I’m pretty sure it would have been difficult for me to get past that step :)

    We hid our popper after a couple of days! My husband also puts duct tape over the speakers on all the noisy toys to try and make them less noisy. It doesn’t really work – I suggest removing the batteries instead!
