This morning was a doozy. I had high hopes of waking up early and getting a million things done before the boys woke up. I managed to write a less than mediocre post and that was about it. That left me about 5 minutes to get myself and the boys ready and out the door to Strollerjam (just in case you’re wondering- that is NOT possible).
I got us all changed in clean clothes (me in my new uniform) and out the door.
The boys got their milk, but mama had no time for coffee (or to do her hair). Ugh.
I scarfed down a Chocolate Peanut Butter Supreme Protein bar in about 1 minute on the way to class.
Hmmm….. looks like I didn’t have time to get my “inserts” in my new workout top either.
We got to class just in time to get everything out of the car and complete the warm-up loop.
Then it started raining.
Happy Monday to us!
So we packed everything back up and headed home. (It’s about a 35 minute drive.)
Home wasn’t much better.
I was grumpy and in need of caffeine.
The boys were disappointed in their on-the-go breakfast (milk, a banana and some graham crackers- please don’t judge).
I tried to salvage the situation with some whole grain waffles topped with my attempt at Mama Pea’s Sunflower Seed Butter.
That worked for about 5 minutes. It probably would’ve lasted longer if my butter turned out as good as hers, but these guys were not impressed. I don’t have the special skill yet.
They were over it.
I needed my daily latte like no other. I mean I NEEDED it. You’ve been there before, yes?
I figured once I had my latte I wouldn’t be annoyed by the constant standing on chairs, throwing of refrigerator magnets, the dreaded “popcorn” toys and Kitty’s airballs. (You don’t even want to know.)
The pressure was on.
Somehow, I happen to create the perfect solution.
A little caffeine.
A little dark chocolate.
A little PB2.
Dark Chocolate PB2 Latte
1-1 1/2 cups nondairy milk
sweetener of choice
2 tablespoons my favorite cocoa powder
2 tablespoons PB2
Notes- I like to use a combination of Vanilla Soy Slender and unsweetened almond milk.
I usually use 2 Splenda packets for the sweetener.
Brew espresso following directions. (I brew mine with the stovetop espresso maker.)
Microwave the milk and sweetener for about 3 minutes.
While milk is heating, put cocoa powder and PB2 in large mug.
Stir until smooth.
Froth hot milk and sweetener. (I use my handheld milk frother.)
Add milk to chocolate PB espresso mixture.
This drink is THAT good.
And even better topped with a little Trader Joe’s Chocolate, Sugar and coffee bean grinder.

You can tell from the picture that this latte was much more important than doing something about my hair. Ha!

Mommy was ready to help now.
And so was Kitty.
And, well, so was a 10 minute Baby Genius show.
Thanks to that latte we tackled the rest of the day without any issues. The boys were off to Tutu’s while I was off the the Y for 3 hours of teaching aerobics.
I have a feeling this drink is going to be a regular part of the morning routine. Next time I’ll have it a little earlier.
