I thought I’d get away with just featuring a little Flat Kitty picture on my post last night, but this guy needed his own feature.
So…..
after this super healthy lunch of roasted broccoli and tempeh (with a small dish of marinara on the side- not pictured)
the boys were sleeping and Flat Kitty knew I needed a serious SNACK!
I really should have gotten on the treadmill, but I needed some food first.
I couldn’t decide if I wanted a “nack” apple cinnamon oatmeal cookie or a fall apple bake so we came up with a little combination of the two.
Yep, it looked a little like a big blob, but we really didn’t care.

No, I mean THIS thing.
Yep. Good stuff.
Ginormous Apple Cinnamon Bookie
serves one (tired, hungry mama)
(My calorie estimate for this entire bookie is about 230 calories. Freaking awesome!)
1/4 cup applesauce
1/2 apple, cut into small chunks
1/4 cup egg substitute
2 tablespoons nondairy milk
sweetener of choice (I used one Splenda packet)
1/4 teaspoon vanilla extract
cinnamon to taste
1/2 teaspoon baking powder
2 tablespoons oats
2 tablespoons coconut flour
Directions:
Mix all ingredients together in small bowl.
Plop (yes plop) dough mixture onto cookie sheet lined with parchment paper.
Bake at 375 for 20 minutes.
Notes-
I’m sure this could also be microwaved in a mug, but I was going for more of a big baked cookie blob. A “bookie”. Sounds delicious, yes?
I didn’t share. I’m selfish.
I told Flat Kitty to go kick rocks.
Then I felt bad.
And then Flat Kitty came back with an even better idea to crumble this ginormous cinnamon apple bookie in an almost empty Naturally More jar with a little Kirkland nonfat Greek yogurt (mixed with some sugar free vanilla pudding mix).
Dang this guy is smart.
Dang my tummy is happy!
Dang I only have about 30 more minutes to try to fit in a treadmill run.

How do you like the Kirkland Greek Yogurt? I am always tempted to buy it but stay loyal to my Chobani or Fage.
Chelsea- I was hesitant to buy it too since I only liked FAGE. But… I have to say that I really like the Kirkland Greek Yogurt and you can’t beat the price! 🙂 You should try it!

So I bought the broccoli slaw and am trying your spaghetti tonight, so excited. You know what? I actually like Kirkland’s Greek yogurt better than Fage’. Costco is so awesome.
