Okay, that might be the worst post title I’ve had yet. Way to go Kristin.
It’s been a rough week around here. Thank goodness we’re finally all feeling better. I think the STUFT family is officially back in action.
We’ve said goodbye to our lazy pajama days
and tried to clean ourselves up to impress some people.
Ha ha! We had a little photo shoot the other day for the local city recreational catalog. The boys and I get to by on the cover for our Mom and Tot boot camp class. Fun huh?
The photo shoot was a little tiring. Joaquin was all about telling me when to go “up” and “down”. Ugh.
Thank goodness there weren’t any close-ups because there was all kids of snot all over the boys’ faces. And I need to thank lululemon yet again for the “inserts”. Love those things!
Okay, now on to business.
A little someone felt neglected yesterday.

Even more fabulous than the holiday cups is my new favorite drink.
I went in yesterday after my long work day (3 hours) and told me new best friend Sara that I couldn’t decide between a green tea latte and a regular espresso latte. Rather than being annoyed with my indecisiveness, she pretty much changed my life by telling me about her favorite drink and making it for me.
Ready?
Green tea soy latte with one pump sugar free vanilla syrup and one shot of espresso.
Yes, my friends, AMAZING!
I even made a mistake and forgot to order it with soy milk so I had an extra one with regular milk to share.
Ha ha! It was Andrew who actually drank it and said it wasn’t bad (my interpretation: “this is the best drink ever”).
And may I just say that it was just as fabulous when I went back to Starbucks this morning after boot camp (even though when I ordered it I got a few weird looks).
So fabulous that this new discovery had to be celebrated with a “cheers”.

Last night we took “date night” on the road and had dinner friends.
My good friends Denise and Laurie. I used to see these ladies every day at work when I taught PE full time. I miss them!
Oops, sorry, no pictures of the men. Thanks to them though for watching the kids while the ladies got to chat and drink wine.
I was charge of bringing dessert and in true Kristin fashion I showed up with an unfrosted cake and a jar of Halloween frosting. Aren’t I a nice guest? And I wonder we don’t get many invites. Ha!
The cake I made was my “go to” low fat recipe for boxed cake mixes. I thought I’d share.
I know there are several different ways to create low fat recipes with cake mixes (jar of pumpkin, can of diet soda, etc.), but I‘ve found this one to be my favorite.
It works with any flavor cake mix and tastes the best. A lot of people don’t even realize it’s low fat.
Beavis, I keep forgetting this guy.
Easiest Low Fat Boxed Cake Recipe
1 box cake mix (any flavor)
1 1/3 cup water
1 cup egg whites
1/2 cup applesauce
Directions:
Combine all ingredients and bake according to cake box instructions.
This works with any boxed cake mix, but depending on the size of the box the ingredient amounts might differ. Just follow the cake box directions and substitute 1/3 cup egg substitute for each whole egg and an equal amount of applesauce for the oil.
Yep. Keeping it classy.
At least the finished product looked good.
And yes, that was my big dessert plate.
By the way, Vons’ Safeway Select brand has some pretty darn good low fat ice cream flavors for a really great price. Last night’s was Moose Tracks. Yum!

Any ideas for substituting for shortening or butter in cookies? I have lots of persimmons and want to make persimmon cookies but don’t want to use butter/shortening. Adorable pictures!
Hmm…. that’s a tough one Jennifer. I would try applesauce, but only for half the butter, don’t substitute the whole thing. Coconut butter would be a good alternative that would probably taste amazing! Persimmon cookies????? Sounds delicious!

You know…..Kitty has amazing eyes! It’s really his only (oops I mean BEST) feature! I love that cat. Good luck with the race if I don’t make it to gym this Thursday. I’ve been resting a strained butt muscle that has affected my hip. It’s getting better…..see you soon.
